Topolobampo Wine List

+ Rick and Deann Bayless and the Frontera Grill/Topolobampo team, in partnership with Chris Koetke, Dean of
Culinary Arts at Kendall College, the Chicago Public Schools and the Mayor’s Office, offer a resounding thanks for
helping us provide Mexican-American students the opportunity to attend culinary school. To increase the restaurant’s
support of culinary education for those who might not be able to afford it, we are adding one dollar to the price of
each bottle of wine—a dollar that will go directly to the scholarship fund. Your donation really does make a
difference.
Wines listed in green indicate producers which practice biodynamic, organic or sustainable
agriculture in their vineyards. You may not recognize some of the wines from our list as we represent many smaller
producers making hand-crafted wines. Vintages and wines are subject to availability.

Wines of the Valle De Guadalupe
Baja California, Mexico
“I am thrilled to present wines from the Guadalupe Valley! Because they are extremely limited in production,
they are nearly impossible to find in the US. Overall, they tend to be lighter-bodied, softer in tannin and more
fruit-forward than their counterparts grown in other regions of the world. Wines from this area have a very
specific terroir as well, which comes across as a slight salinity on the finish.” Jill Gubesch -sommelier
