Make Every Recipe Count Let’s be honest. Never mind what you know about plant happy eating there will always be a recipe or two you’re going to miss. But there is a way to change any of your old favourites into newly refurbished ones! All you have to do is make a few changes. 1. Leave out the meat and go for plants: New twist Old favourite Beef burritos and chillies Chicken risotto Chunky pieces of meat Beef burger Grilled chicken Cubes of meat in a stew Tuna salad Egg omelette Old favourite Burritos with lots of beans and vegetables Risotto with peas and mushrooms or veggies and a handful of nuts Use chunky pieces of veggies (coquettes, eggplant, mushrooms, peppers) Bean, lentil or veggies burger Grilled tofu or tempeh or Portobello mushrooms Bean stew Chickpea salad with some capers Omelette made from chickpea flour 2. Switch small animal additions for plant alternatives New twist Chicken or beef stock Bacon bits, ham, cheese Creamy sauces The traditional prep Vegetable stock Smoked tofu, extra veggies, nuts, fresh herbs and spices Plant based creamers – no-one will tell the difference 3. Reduce/replace or eliminate added fat or oil. New twist Sautéing in oil or butter Baking with oil, margarine or butter The traditional prep Using dried herbs & spices Sauté in water, vegetable stock, tomato paste, soy sauce or wine Use mashed banana, apple sauce, mashed silken tofu or prune puree to replace some or all the fat 4. Let herbs and spices boost the flavour. New twist Before taking off the heat add fresh herbs or a splash of lemon juice to the meal. *A changeover of a recipe* Paprika sauce (originally Chicken in a paprika sauce) Ingredients to serve 4-6 people: 1 onion chopped, 2 cloves of garlic crushed, 2 tsp. of paprika, 1-2 cups of cooked kidney beans (or any other type), 1 red or yellow pepper chopped, 2 tomatoes (peeled if you prefer), 2 tbsp. of tomato paste, salt, 100ml of soy creamer, cup of oat milk, potato starch, salt to taste, red pepper flakes (optional). Caramelise an onion in a bit of water, add garlic, tomato paste and paprika and cook on low heat until it becomes aromatic. Add tomatoes chopped into pieces, pepper, beans, cream and milk and cook until the vegetables are soft. Add salt and a little bit of milk with mixed potato starch to thicken the sauce. You see, it’s easy! You’ll use the spices you’re used to, replace meat with legumes or veggies and dairy creamer with a plant alternative. And Voila!
