Kleefeld Chili Cook-Off — 9 Simple Competition Rules
1. CHILI COOKED ON SITE: All chili must be cooked from scratch on site the day of the cook off. All chili must be prepared in the open. One cook must be at a station at any time (no unattended kitchens)
2. CHILI COOKED FROM SCRATCH. "Scratch" is defined as starting with raw meat(provided by KHF). You will need to
supply the cooking mechanism – propane cooker, coleman stove, really big magnifying glass – whatever).
3. Commercial chili powder is permissible (no packets of instant chili, taco or any other pre-packaged seasoning).
4. SANITATION- Cooks are to prepare and cook chili in as sanitary a manner as possible.
5. INSPECTION OF COOKING CONDITIONS- Cooking conditions are subject to inspection (before & during) by the
KRA Official or his/her designee. (Failure to comply is subject to disqualification.)
6. COOKS MAY HAVE TO TASTE THEIR CHILI - Chili cooks have to use disposable spoons. (If a contestant refuses,
his or her chili will be disqualified.)
7. Plan to make a minimum of 3-5 gallons of chili. We are hoping for a good crowd, and they can’t vote for you if
they can’t taste your chili. You’ll be tired anyway, so make enough for leftovers on Sunday. You must take leftovers home or you can try sneaking leftovers into the coolers of others.
8. Hygiene/Food Handling: Please attempt to keep foreign debris, hair and pharmaceuticals out of your chili. Head cook is
responsible for maintaining a clean and hygienic area and will ensure that all food is prepared and handled in a safe
manner.
Basic Information
No electricity will be available. Please plan on cooking your chili with propane and keeping it hot in this
manner.
PARTICIPATION RULES:
• There is a two member maximum on a team. The winning teams will be awarded one prize per team.
 Chili must be prepared and cooked on site from scratch.
 The temperature of your chili must reach 74 degrees (165 F) before it can be served or judged
• Teams must provide a way to keep chili hot. The temperature of your chili must maintain a 60 degree(140 F ) at all time while being served.
• All teams must furnish their own cooking utensils and equipment.
• All Ingredients must be prepared (chopped, sliced or diced etc.) on site, upon completion of work
station inspection, but not prior to the event start.
 No chili/taco mixes or packets of any combination, are to be used, only fresh and store bought unopened canned ingredients may be used. Home sealed canning will NOT be permitted.
 No Alcohol permitted in your Chili or in your cooking area for consumption.
• Each team must provide a list of ALL potential ingredients proposed to be in their chili at their station. This must be in a visible location (to protect those with food allergies). Please present your list to
the Chili manager by registration on Friday night (in person with your team name at the top).
 Be prepared to serve your chili from 11:00am to 1:30pm. Winners are announced at 3:00 pm.
 By entering this event you are committing your team to go to the Worlds to represent Canada. Nov
8-15th at Orange Beach, Alabama, USA. If you finish in 1st or 2nd place with 3rd as the alternate.
 Number of teams is limited, due to space availability, so get in early!

7:00am - Sites will be available to start setting up (later if I don’t get enough coffee)
7:00am - 7:45am Site inspection by Event Inspectors must be completed. (incudes all ingredients &
equipment). Event inspection pass must be received & visible prior to 8am start.
8:00am - Horn Sounds to start competition! Festival opens to public, you may begin to prep and cook, if
you are ready after setting up and making sure you are in the right place (hate to see you go to the wrong
place and just start cooking chili – would be funny though).
8:00am - 11:00am Cooking Time
11:00pm - Panel of judges will do their official tasting around 11:00 am (to give you a little extra time before lunch)
11:30am -1:30pm Peoples Choice serving will start at 11:30am through 1:30pm
1:30pm - 2:30pm Take down & Clean up Clean Up and general congratulating and junk chili stashing –
after clean up and during awards.
2:00pm - People’s Choice Poll closes, tally ballots
3:00pm - Announce winners
Judging Criteria - Chili will be judged accor ding to 4 cr iter ia. Chili will be r ated on a scale of zer o to 10
for each of the 4 categories, and each category is weighted differently, with the lowest judges score dropped;
1. Appearance – Chili should look appetizing, reddish brown and generally exciting.
2.Consistency – Chili must have a good ratio between sauce and meat. It should not be dry, watery, grainy,
lumpy, or greasy.
3.Taste – Taste, above all else, taste is the most important factor. The taste should consist of a combination
of meat, spices, etc. with no particular ingredient being dominant.
4.After-taste – The aftertaste or bite is the heat created by the various types of spices and or peppers.

TEAM to PROVIDE:
• 3 gallons of chili (3-5 gallons is preferred) . Confirmation of the number of gallons required will be
done a minimum of two weeks prior to event as this number changes dependent on event participants.
• Tables, chairs, pop up tent(10 x10), really big umbrella, decorations, wipeable tablecloth, etc.
• Costumes / uniform for your table staff if you are inclined, and Company signage if applicable
• Responsible for own trash and clean up in your area.
• No additional food or beverage items can be sold or given.
• All coolers must use ice packs, NOT “ICE”.
• Aprons, pony tail, hair nets, hat, toque for a hair restraint.(a shaved head may be an option for some!)
Your ingredient COSTS: $20.00-40.00 average.
KRA FESTIVAL TO PROVIDE:
Government Inspected Ground Beef
Other ingredients my be required dependent on sponsors (to be determined).
• Spoons and tasting cups for tasting and judging of chili
• Peoples Choice Score event chips
• Chili event garbage cans.
• Wipe cloth & sterile pail with bleach water
 Head Judge is a Certified Judge with the KCBS, Kansas City, Missouri.


World Food Championship Information:




A Golden Ticket into the World Food Championship November 8-16th in Orange Beach, Alabama
USA in 2016,
If the Kleefeld Honey Festival winner is under the age of 18, a parent or guardian is recommended
to accompany the winner.
The Winner will be require to comply with the World Food Championship rules and regulations.
By entering this event your are committing your team to go to the Worlds to represent Canada, if
you finish in 1st or 2nd place with 3rd standing by as the alternate.
EQUIPMENT LIST ASSISTANT ONLY
As an esteemed cook at this event, you will be afforded all the respect that is due you. You will not, however, be
given any real consideration because this is an “every man for himself” kind of situation, now isn’t it? So, while
certain basic amenities will be made available, you will need to bring everything you might require to make your
chili.
Rule of thumb – if you think you might need it, bring it.
Items you might need:
Propane for grill (1 full tanks is a great idea), Grill, Ingredients, Pot, Knives, Can opener, Cutting boards, Cooking utensils, Hot pads, Containers to take away your leftovers, Cooler, Sanity
PENALTIES - Decisions of the official(s) are final in the case of disqualification, the KRA Head official
monitoring the cook off will immediately notify the head cook and give a reason for disqualification.
