CLARITY AND STABILITY Consumer habits
and production trends are placing increasing
demands on shelf life to preserve flavor,
clarity, color, foam and aroma. To produce
sparkling, clear beer with a long shelf life
requires extra steps beyond filtration.
Current standard practice requires a process
that utilizes a diatomite filter aid and a silica
gel stabilization agent. The Celite Cynergy
beer stabilizing filter aid is the first - and
only - solution that provides both while
increasing filtration capacity by up to 50%.

stabilization,
chill-haze occurs
when beer gets
warm during
transportation
and storage, then
chilled for drinking.
As shelf life gets
longer, it is more
likely to show up.
Current Process
Diatomite filter aid filtration (also called diatomaceous
earth, DE or kieselguhr) is used in more than 90% of beer
filtration systems because of its flexibility in handling a
wide range of brewing filtration challenges. Additional
processing is required for cold stabilization, which often
utilizes silica gel. While silica gel does a good job of cold
stabilizing, it has disadvantages:

An Innovation in Beer Stabilization
and Clarification — Celite Cynergy®
System
The Celite Cynergy filter aid is a beer stabilizing diatomite
product that filters like diatomite (DE) and cold stabilizes like
silica gel, yet it performs better than conventional DE and
silica gel. When utilizing the Celite Cynergy system, material
volume decreases, resulting in reduced waste, less cleaning,
and more storage space, increasing beer production without
expanding filtration and stabilization equipment.
Compared with a regular system, much less total filtration
“mass” is required (diatomite and Celite Cynergy instead
of diatomite and regular silica gel). This translates to
more efficient filtration because the filter cake no longer
contains impermeable silica gel particles which interfere
with filtration. The flow rate will be higher and fewer filter cycles will
be needed per volume of beer filtered, with less spend
on filter cleaning agents (cleaning chemicals, hot water,
deaerated water, etc.).

Filter Cake | Volume Reduction
Celite Cynergy improves and stabilizes filtration
performance. Cynergy is a rigid silica particle that retains
the microporous structure of DE. Unlike silica gel, Cynergy
is not a compressible gel and therefore does not contribute
to back pressure. This increases the filtration efficiency,
with up to 50% longer filter cycles.
Conventional filtration with DE and silica gel generates
thicker filter cakes than the Celite Cynergy filter aid. With
Cynergy, the total cake volume is reduced due to filtration
efficiency. As a result, you’ll achieve longer filter cycles,
extending on-line time while increasing filter capacity and
reducing cleaning frequency and waste.

DOSAGE GUIDELINES | How much do I use?
n GRAS-approved for beer filtration
Celite Cynergy can be used alone or in combination
with conventional Celite DE with the specific dosage
dependent on beer type and desired degree of stability
(shelf life). Every brewery and beer brand is unique.
Celite Cynergy does not introduce any “new materials”
to your brewery and is approved for beer processing by
both the U.S. Food and Drug Administration (FDA) and
the U.S. Tobacco Tax and Trade Bureau (TTB).
-- As a diatomite product, it meets the FDA
requirements of Generally Recognized As Safe (GRAS)
for use in beer filtration
-- A Food Chemical Codex (FCC) grade diatomite
product

Celite Cynergy extends filtration cycle length by
eliminating the negative impact silica gels have on filter
cake permeability. Without the impermeable silica gel
particles, performance improves significantly: higher
filter flow rates and fewer filter cycles needed per
volume of beer filtered. And because silica gel no longer
needs to be removed as part of filtration, significantly
less total filter powder , or “mass”, is required.
