To produce sparkling, clear beer with a long shelf life requires extra steps beyond filtration. Current standard practice requires a process that utilizes a diatomite filter aid and a silica gel stabilization agent. The Celite Cynergy beer stabilizing filter aid is the first - and only - solution that provides both while increasing filtration capacity by up to 50%. Without sufficient stabilization, chill-haze occurs when beer gets warm during transportation and storage, then chilled for drinking. As shelf life gets longer, it is more likely to show up. Current Process Diatomite filter aid filtration (also called diatomaceous earth, DE or kieselguhr) is used in more than 90% of beer filtration systems because of its flexibility in handling a wide range of brewing filtration challenges. Additional processing is required for cold stabilization, which often utilizes silica gel. While silica gel does a good job of cold stabilizing, it has disadvantages: -- Requires an additional processing step -- Capital equipment must be allocated -- Necessitates additional raw material handling and storage -- Reduces filtration capacity by up to 50% -- Increases waste handling Chill-haze may be defined as an insoluble or semisoluble protien/ tannoid complex which forms a colloidal suspension in beer. These particles scatter transmitted light and are observed as a degradation in the transparency of the beer. An Innovation in Beer Stabilization and Clarification — Celite Cynergy® System The Celite Cynergy filter aid is a beer stabilizing diatomite product that filters like diatomite (DE) and cold stabilizes like silica gel, yet it performs better than conventional DE and silica gel. When utilizing the Celite Cynergy system, material volume decreases, resulting in reduced waste, less cleaning, and more storage space, increasing beer production without expanding filtration and stabilization equipment. Compared with a regular system, much less total filtration “mass” is required (diatomite and Celite Cynergy instead of diatomite and regular silica gel). This translates to more efficient filtration because the filter cake no longer contains impermeable silica gel particles which interfere with filtration. The flow rate will be higher and fewer filter cycles will be needed per volume of beer filtered, with less spend on filter cleaning agents (cleaning chemicals, hot water, deaerated water, etc.). IMPROVED FILTRATION Equals Longer Filter Cycles How Does Cynergy work? n Improves brewing process efficiency n Reduces chill-haze Celite Cynergy replaces both conventional diatomite and silica gel, significantly reducing powder (silica gel plus diatomite) usage by up to 50% - resulting in higher filtration efficiencies. -- No need to add silica gel -- Reduces storage and management of an additional raw material -- Uses less total powder and generates less waste — up to 50% reduction in waste Cynergy is engineered to selectively absorb haze-forming proteins, the major cause of non-biological post filtration turbidity. -- Selective absorption of haze-forming proteins, which yields longer shelf life for beer -- Does not affect sensory profile: flavor, color, aroma or foam stability n Improves filtration performance -- Reduces filter cake volume by up to 50%, leading to longer filter runs between filter cleaning -- Provides improved filtration performance as measured by filtrate clarity, flux and unit consumption in comparison to using silica gel and DE separately -- No contact or hydration time needed prior to filtration -- Does not require the incubation step necessary when using conventional silica gel Filter Cake | Volume Reduction Celite Cynergy improves and stabilizes filtration performance. Cynergy is a rigid silica particle that retains the microporous structure of DE. Unlike silica gel, Cynergy is not a compressible gel and therefore does not contribute to back pressure. This increases the filtration efficiency, with up to 50% longer filter cycles. Conventional filtration with DE and silica gel generates thicker filter cakes than the Celite Cynergy filter aid. With Cynergy, the total cake volume is reduced due to filtration efficiency. As a result, you’ll achieve longer filter cycles, extending on-line time while increasing filter capacity and reducing cleaning frequency and waste. 2.0 Cake Thickness (cm) Filter Cycles | Longer Run Times 1.5 1.70 cm 1.0 0.90 cm 0.5 0.0 Control Celite with xerogel Celite Cynergy Bodyfeed Precoat SUSTAINABILITY Reduces Waste & Energy Usage better for the environment n Less beer extract losses -- Minimizes beer extract losses — fewer filter start ups and shut downs means less beer and water going down the drain n Reduces carbon footprint n Requires no capital investment The physical properties of Celite Cynergy are virtually identical to diatomite, and it runs on existing diatomite filtration systems. There is no need for new equipment purchases. -- Easy to implement in brewery, utilizing existing DE filtration processing schemes, equipment and storage -- Compatible with existing DE delivery and filtration systems so there is no need to purchase new equipment -- Easy-to-optimize process requires no modifications to existing equipment n Reduces cellaring costs -- Cellaring operations are simplified, reducing expenses -- Saves time and materials due to longer filtration runs between filter cleaning -- Reduction of filter cake volume leads to longer filter runs between filter cleans -- Reduction in hot water and electricity usage due to fewer cycles of cleaning and sterilizing filter -- Improvement and simplification of brewing process by combining filtering and stabilization processes, and removing the need for silica gel during beer clarification -- Eliminates the stabilization stage performed at sub-zero temperatures which reduces energy use n Reduces water usage and effluent disposal -- Longer filtration runs between cleaning saves time and materials, reducing water consumption and increasing process efficiency -- Longer filter runs leads to reduced waste cake, resulting in reduced disposal costs -- Fewer filter wash offs means less cleaning chemicals being used and going down the drain For Additional information Please visit www.celitecynergy.com. Approved for Beer Production DOSAGE GUIDELINES | How much do I use? n GRAS-approved for beer filtration Celite Cynergy can be used alone or in combination with conventional Celite DE with the specific dosage dependent on beer type and desired degree of stability (shelf life). Every brewery and beer brand is unique. Celite Cynergy does not introduce any “new materials” to your brewery and is approved for beer processing by both the U.S. Food and Drug Administration (FDA) and the U.S. Tobacco Tax and Trade Bureau (TTB). -- As a diatomite product, it meets the FDA requirements of Generally Recognized As Safe (GRAS) for use in beer filtration -- A Food Chemical Codex (FCC) grade diatomite product Celite Cynergy process compared to typical silica gel processes shows reduced total processing aid usage. Celite Cynergy is dosed at 1-2 times current silica gel usage depending on the silica gel product. Celite Cynergy extends filtration cycle length by eliminating the negative impact silica gels have on filter cake permeability. Without the impermeable silica gel particles, performance improves significantly: higher filter flow rates and fewer filter cycles needed per volume of beer filtered. And because silica gel no longer needs to be removed as part of filtration, significantly less total filter powder , or “mass”, is required.
