Expansion of Carolina Cupboard: Community Food Pantry to include perishable food items B. As soon as possible after the awarding of grant money (July 11, 2016), orders would be placed for the needed refrigerators, shelving, bins, and freezer. Currently planning is taking place in order to transition from our current location in Avery Residence Hall into a larger space. Due to this relocation, this equipment will be necessary to assist Carolina Cupboard with expanding our pantry inventory to include perishable food items, store more food, and to supply food for more students during the 2016-2017 school year and subsequent years. C. The mission of Carolina Cupboard is to provide food assistance to individuals of the Carolina community be they student, staff, or faculty by acquiring and distributing food to those in need on campus. Currently, our initiatives focus on serving undergraduate and graduate students; however, it is our full intention to expand to the communities intended as outlined in our mission statement. Carolina Cupboard’s multidimensional purpose seeks to provide hunger-relief as well as educating, empowering, and engaging the community on issues related to food insecurity, poverty, and health & nutrition. Carolina Cupboard is seeking to purchase refrigerators, shelves, donation bins and deep freezers to allow the pantry to expand and act as a fully functioning pantry to assist UNC students in obtaining all food items to provide food security. Lastly, one of Carolina Cupboard’s long-term goals includes establishing partnerships with food assistant programs and organizations in an attempt to reach a larger amount of students, staff, and faculty on the campus. D. Students will benefit from this expansion in a multitude of ways. This expansion allows Carolina Cupboard to truly combat food insecurity in the proper manner. For example, the us of a freezer and refrigerators will allow storage of proteins, dairy products, and fresh vegetables. Essentially, this allows Carolina Cupboard the means to provide healthier food alternatives and all food options for the community. These new resources will allow us to cut down on the lack of consistent access to nutritious food students have that is limited by lack of money, transportation and other reasons. More importantly, given the expansion to include perishable food items, the pantry will serve as a one-stop resource, thus allowing students in need to obtain all the necessary ingredients for a complete, nutritious meal. Although, Carolina Cupboard currently declines all donations of any perishable foods, given our focus is nonperishable boxed and canned goods, this grant will allow Carolina Cupboard to serve many individuals and to be more cognizant of the foods we provide, their contents and nutritional value. E. Carolina Cupboard opened its doors for service for the 2015-2016 academic year on August 26, 2015. Since this time, in which Carolina Cupboard is open three days a week, 75 visitors to the pantry have been recorded. During a 7-month period last academic year, Carolina Cupboard served 82 individuals, thus the increase in numbers we’ve seen within the past 2 months is reflective of the need for Carolina Cupboard on this campus. With freezers, refrigerator units, and new storage in the forms of bins and shelves, this number is sure to increase. The Carolina community has an extensively diverse population when it comes to dietary classifications and needs. As of now, the needs of some members of the community are marginalized due to the limited nonperishable foods we supply. Expanding the pantry to include perishable food tiems would open the doors for Fruitarians, Veganism, gluten-free diets, and numerous other dietary needs. Additionally, certain healthy, protein-filled foods can only be stored in colder units; thus, providing these units would allow us to focus on distributing balanced meals that cover all bases of the food pyramid. Alternatively, balanced frozen entrees that could be prepared in little time would be provided and would be sought out by students to accommodate those bust busy schedules who lack the time to cook. This expansion would theoretically increase the visitation in the pantry. Moreover, there is no defined type of person who visits the Carolina Cupboard; there are various narratives for each person who utilizes the resource. Given the location of the university in relation to its nearest grocery stores, the difficulties that arise for students who need to purchase groceries must be acknowledged. Individuals who access Carolina Cupboard may lack the financial means to purchase groceries, lack the time to travel to a grocery store and/or do not have the transportation to visit a grocery. Thus, Carolina Cupboard is not a resource only for the poor or impoverished, but serves as a resource for any student who cannot obtain the ingredients to prepare a meal because of their individual circumstances, whatever those may be. F. The overall success of the proposed program will be measured via the Carolina Cupboard’s visitors’ log and inventory records. Prior to obtaining any nonperishable items within the pantry, each person is required to document their PID and email address. Along, with this information, volunteers within the pantry explicitly document what visitors obtain. The visitor’s log allows the executive team to determine who visits the pantry, when they visit, how frequently they visit and the items obtained. Moreover, by carefully documenting each item visitors receive from the pantry, we are able to track what individuals who visit the pantry are most in need of and how much food we give away per month and on an annual basis. It is the hope of Carolina Cupboard that inventory will reflect a demand by community members for perishable food items that could be stored in freezer and refrigerator units obtained by this grant. An increase in visitation and utilization of the newly accessible goods will be the barometer for success. G. The expansion to include perishable food items would be an addition to the existing functions of the Carolina Cupboard: Community Food Pantry. Carolina Cupboard celebrated its opening ceremony on October 24, 2014, thus the resource is relatively new to campus; however, it has proven to be a resource of high demand. The mission of Carolina Cupboard is to provide food assistance to individuals of the Carolina community and it is necessary for Carolina Cupboard to be a resource that promotes good nutrition and health by offering access to food items of all food categories. The Carolina Cupboard: Community Food Pantry would continue to exist as long as there is a need for the resource on campus. Food insecurities and hunger within the state of North Carolina has been determined to be especially prevalent amongst college students because of the various financial backgrounds students come from. Moreover, the change in environment, geographically, socially, and economically, poses a challenge for students and compromises their food choices and the foods they access. Thus, with Carolina Cupboard’s planned expansion, it is our hope that Carolina Cupboard will remain open for many subsequent years. Executive Summary: Carolina Cupboard: Community Food Pantry is an on-campus food pantry located in the basement of Avery Residence Hall that currently serves undergraduate and graduate students. Our mission is to provide food assistance to individuals of the Carolina community by acquiring and distributing food to those in need. Carolina Cupboard currently provides non-perishable food items, toiletries, and hygiene products to those in need. Carolina Cupboard is requesting funding to purchase two refrigerator units and a freezer to expand our resources to include perishable food items. Additionally, Carolina Cupboard is requesting funding for shelves and bins for storage and transport of donations. With our growth since October of last year, the need for more supplies to cater to visitors’ needs is evident. Thus, Carolina Cupboard intends to expand its resources to include perishable food items in order to function as a full food pantry for students and individuals of the UNC community. Additionally, each of the listed items are necessary to shift Carolina Cupboard from boxed and canned nonperishable items to a food pantry that can provide perishable foods and food options necessary for visitors with various dietary restrictions. Section E Any funds that Carolina Cupboard acquires through fundraising initiatives will be used to purchase food items for the pantry and ensure a variety of food supply options are accessible by visitors to pantry. Section F Carolina Cupboard has never received Parent Council funding before. Section G The UNC community at large as been extremely supportive of Carolina Cupboard and our mission to alleviate hunger and food insecurities on this campus through constant food donations and food drives. Provided the Parent Council grant is funded, Carolina Cupboard would continue to receive donations to maintain the food supply of the pantry. In addition, members of Carolina Cupboard volunteer at basketball and football games and swim meets to secure funds Carolina Cupboard receives for volunteering as a group. These funds are used to purchase food items that the pantry is need of or items that are not frequently donated. Moreover, an increased interest in monetary donations has been expressed by supporters of the Carolina Cupboard, which could be used to contribute to the sustainability of this program. SUPPLEMENTARY MATERIALS This graphic will be printed on the side of the custom bins. This is an example of marketing material we use to advertise Carolina Cupboard to students.
