Bacanora Bacanora is a type of Mezcal made from the Agave plant in the state of Sonora where the terroir, native yeast and dry arid climate gives Bacanoras their subtle, smoky, complex flavor, and smooth/earthy finish. Sotol Distilled from a cousin of the Agave, Sotol is made from a succulent called Dasylirion Wheeleri and is technically not a Mezcal, though it is always in the conversation. While Agave only flowers once in its lifetime, these plants produce flowers that take approximately 15 years to mature and yield only one bottle of sotol. The center is cooked and/or steamed, shredded, fermented, and then distilled.
