17 th Competition “Il piatto Verde”
Youth Herbs

Regulation
1. The Organization
The Istituto Professionale di Stato per I Servizi Alberghieri e della Ristorazione of Riolo
Terme and the Società d’Area “Terre di Faenza” in collaboration with JFC, Touristic
Marketing Society, organze the event “Il Piatto Verde”.
2. The Pur pose
The aim of the event is to encourage the study on the use of herbs by increasing pupils’
professional performances and encouraging the meeting of pupils and teachers coming from
different countries, different social and cultural settings in order to exchange knowledge,
experiences, working methods.
3. Participation
Any Italian and foreign Hotel school can participate.
The Hotel School of Riolo Terme, being the host school, does not participate to the
competition.
The competition is for pupils under 18 attending the 3 rd year of the Hotel School.
The participation is free of any charge.
The finalist schools will be hosted in Riolo Terme for the necessary time.
The journey and the necessary material to carry out the recipe and the service are to be
payed by the competitor schools.
The schools will be represented by
 A cookery pupil
 An escort teacher
The headmaster is invited to participate to the final competition.
The pupil will carry out the chosen dish for 5 persons and take care of its presentation.

4. Topic
The topic of this event is “ Youth Herbs”
The competitors will have to send, by the attached sheet, a recipe chosen among starter, first
or main course. The recipe for 5 persons will be described in detail, as shown in the attached
sheet: t is possible to participate with more than one recipe.
The recipes’ main ingredients will have to be chosen among those indicated in the
attached list.
The participants will have to present a short report (maximum 2 typed sheets) with the main
characteristics of the used herbs and the coupled wine according to the attached sheet.
Any possible change of the event’s programme will be communicated to the participants as
soon as possible.
The participants hand over to the Organizer Committee all rights concerning recipes,
reports, menus, materials and photos also for publications and TV programmes.
5. The competition
Selection: schools will have to send by post to IPSSAR Riolo Terme via Monsignor
Tarlombani 7 Riolo Terme (Ravenna) (the postmark will certify) or by e-mail
([email protected]) or by fax (0546.71859) by Saturday 31th January 2009

the application sheet with:
the participants’ names,
the statement of the admission to the competition
the agreement of all the competition rules,
the recipe’s title and the coupled wine
if necessary accommodation request.

One or more recipes (attached sheet n.1)
A short report (maximum 2 typed sheets) for each recipe and the coupled wine (attached
sheet n. 2).
6. Final competition
Maximum 12 schools will be chosen, each participant will receive official communication
of admission or exclusion to the final competition.
The final competition will take place in the kitchen of IPSSAR Riolo Terme on the 26 th and
27th March 2009.
Each participant will have 2 hours time.
Each participant will have to prepare his own recipe for 4 persons plus an exhibition plate
and present it on single plates.
It is not allowed to make use of ingredients not included in the recipe, nor cooked
ingredients. Only edible decorations made during the competition will be accepted.
At the end of their performance the team will have to clean and leave the kitchen.
The participants will have to bring all the necessary ingredients and the equipment.
The single plates for the service will be provided by IPSSAR.

7. The logistic
The final competition will take place in the kitchen of the I.P.S.S.A.R. Riolo Terme.
8. Evaluation
The participant schools and the 12 finalists will be chosen according to the following
criterions:
The application paper and the attached sheets will have to be sent by the 31th January
All the sheets will have to be completely filled in, possibly typed.
All the sheets must have the required characteristics.
Both papers (recipe and coupled wine) and the report will be assessed by a Selection
Committee appointed by the headmaster of IPSSAR Riolo Terme. The Committee, whose
assessment is irrevocable and will assess according to the following score:
 Recipe
 Wine
 Report
Maximum 60 points
from 0 to 40
from 0 to 10
from 0 to 10
Once admitted to the final competition the score will be cancelled.
The final competition will be assessed according to the following score :
 Preparation
 Presentation
 Tasting
 Originality
Maximum 70 points.
from 0 to 15
from 0 to 15
from 0 to 20
from 0 to 20
Pupils who do not conform to these rules will be sanctioned in the final assessment
(maximum 10 points sanction)
The highest final assessment will be 70 points; each member of the jury will write his mark
on a special paper.
Each pupil’s score will correspond to the amount of the marks given by the members of the
jury.
During the competition pupils will be assisted only by the staff of IPSSAR Riolo Terme.
Nobody else is admitted in the kitchen.
9. The jury
The jury, composed of 4 persons and a secretary without any right of assessment, will be
chosen by the headmaster of IPSSAR Riolo Terme.
The jury will choose a president, whose opinion will prevail in case of parity.
Only the jury can assess the final competition, its assessment is irrevocable.

10. The prizegiving ceremony
The prizegiving will take place during the gala night at the IPSSAR Riolo Terme on the 30 th
March .
The 12 schools that participate to the final competition will be guests of honour . During the
dinner the following prizes will be awarded:
1st Prize
2nd Prize
3rd Prize
€ 500,00 + a trophy
€ 300,00 + a trophy
€ 200,00 + a trophy
Each of the first three classified pupils will have the possibility to participate to a two – or
three days course included in the Catalogue 2009, offered by CAST ALIMENTI, art,
science and technology centre of Brescia.
The first classified will also have the possibility to spend some days in one of the places
included in the territory of the Società d’Area “Terre di Faenza” offereb by I CASOLARI
DELLE ERBE.
Each student and school will receive a certificate.
