OD Brown Beginner Recipe Brewing Time: 3 hours Fermentation Time: 2-4 weeks Fermentation Temperature: 65-70* F Original Gravity: 1.051 Final Gravity: 1.010 IBUs: 17 Color: 27 SRM ABV: 5.5% Boil Time: 60 minutes Pre-Boil Volume: 7 gallons Pre-Boil Gravity: 1.044 Be sure to read the following instructions in their entirety before continuing to the brewing process. PREPARATION The Renegade Pale requires a temperature between 65 and 70 degrees F during the fermentation process. If you have opted for a liquid yeast, we strongly recommend making a yeast starter 48hrs ahead of your brewing time. SANITATION Prior to beginning the brewing process, all equipment must be sanitized. This is imperative in order to avoid contaminating your beer during the brewing and fermentation processes. Renegade Brewing Supplies recommends the Star San Sanitizer. *Star San is a no-rinse, foaming sanitizer which will bubble when mixed with water. The foam produced is food grade and perfectly normal. Do not attempt to remove the foam from the equipment as it is not necessary and will not affect your end results. The most important thing to remember is to thoroughly coat any equipment, including pouring pitchers, fermentation canisters, spoons, wort chillers, funnels and siphons. Anything that will come in contact with the wort after the boil must be sanitized. Sanitation Prep: 1. Fill a 5gal bucket (food grade plastic) with cool tap water. 2. Add 2oz of Star San Sanitizer to the bucket. 3. Coat the bucket with the solution and add the equipment you will be using during the brewing process, leaving to soak in the sterile solution until needed. 4. In addition to smaller equipment, pour some of the sanitizing solution (with a sanitized pitcher) into your fermenter, thoroughly coating the inside. 5. Feel free to leave the sanitizing solution inside the fermenter until your wort is cooled and you are ready to add it to the fermenter. Before adding the wort, slosh around the Star San solution once more in the fermenter before pouring out the excess sanitizing liquid, leaving the remaining foam. *While it is acceptable and appropriate to use tap water for brewing your beer, Renegade Brewing Supplies recommends using store bought RO or Spring water which does not contain chlorine. Distilled Water Should Not Be Used For The Brewing Process. BREW DAY (If you are opting for a partial boil, skip ahead to the next section.) Brewing Instructions: *Always be mindful while adding ingredients of the potential for the wort to boil over the pot. Watch the pot carefully during these times. 1. Bring 7gal of water to 150-155* F and add the provided grains by placing them in the muslin bag and tying the bag closed. Allow the grains to steep in the bag for 20 minutes then remove the bag using a pair of tongs or a spoon. 2. Once the grains have been discarded, add the Dry Malt Extract and gently bring to a rolling boil. At the beginning of the boil add the hops labeled 60 MINUTES. Set a timer for 50 minutes. 3. After the wort has been boiling for 50min, add the provided Whirlflock tablet and the hops labeled 10 MINUTES then insert the wort chiller into the boil. The heat output will need to be adjusted at this time to compensate for the cooling effect of the chiller for the last 10min of the boil. 4. Retain the boil for the last ten minutes with the wort chiller inside the kettle. At the end of the 60min boil, when the timer goes off, chill the wort to 80℉ as quickly as possible. Do not place the lid of the kettle over the wort. To help cool the wort, create a gentle whirlpool with your sanitized, long steel spoon, taking care not to splash the liquid (this adds oxygen to the wort and will affect the results of your beer). Transition to Fermentation: 5. Gently siphon the wort into your fermenter, being careful not to splash the wort. 6. Rehydrate the provided yeast using a small amount of wort (roughly 1 cup). Allow this to sit for 3-5min. (If you have chosen a liquid yeast, you should have made your starter 48hrs prior to beginning the brewing process, as described in the preparation section above.) 7. Introduce the re-hydrated yeast into the fermenter. Do not worry about stirring your yeast into the wort as it will circulate through the fermenter on its own. 8. Now that the yeast has been added, the next step is to aerate the wort before setting it aside for fermentation. *There are several options for aeration. Renegade Brewing Supplies recommends using a can of sterile oxygen and a sanitized tube with an aeration stone attached. Alternatives include using an aquarium pump attached to a sterilized tube or shaking the fermenter vigorously for 35min, but these methods will require more energy and time to achieve the same results. 9. Using a hydrometer, take a gravity reading of your wort. The gravity at this time should read 1.051. *At this point, if you have undergone a traditional boil, you are ready to move ahead to the fermentation phase. If you have chosen to do a partial boil, proceed with the instructions immediately below. Partial Boil Instructions: 1. Bring 2.5gal of water to 150-155* F and add the provided grains using the muslin bag to contain the grains. Allow the grains to steep at 150-155* for 20 minutes. After the steeping period, add the Malt Extract and gently bring the wort to a rolling boil. 2. At the start of the 60min boil, add the hops labeled 60 MINUTE to the wort, watching the kettle carefully to avoid a boil over. Set a timer for 60 minutes. 3. While the wort is boiling, fill a sink with a combination of cold water and ice, creating an ice bath for cooling the wort after the boil. 4. At the end of the 60-minute boil turn off the heat. 5. remove the kettle from the heat source and place it in the ice bath. Allow the wort to cool until it has reached a temperature of 80℉. Do not place the lid of the kettle over the wort. Transition to Fermentation: 6. Add 3gal of water to your sanitized fermenter (Renegade Brewing Supplies recommends store bought RO or spring water). 7. Siphon the wort from the kettle into the fermenter, bringing the total volume of the fermenter to 5.5gal. 8. Rehydrate the provided yeast using a small amount of wort (roughly 1 cup). Allow this to sit for 3-5min. (If you have chosen a liquid yeast, you should have made your starter 48hrs prior to beginning the brewing process, as described in the preparation section above.) 9. Introduce the re-hydrated yeast into the fermenter. Do not worry about stirring your yeast into the wort as it will circulate through the fermenter on its own. 10. Aerate the wort using one of the following methods. Renegade Brewing Supplies recommends using a can of sterile oxygen and a sanitized tube with an aeration stone attached. Alternatives include using an aquarium pump attached to a sterilized tube or shaking the fermenter vigorously for 3-5min, but these methods will require more energy and time to achieve the same results. 11. Using a hydrometer, take a gravity reading of your wort. The gravity at this time should read 1.051. FERMENTATION 1. Place a sanitized airlock on the fermenter with the line full of sanitizing solution. Seal the fermenter. 2. Set the fermenter in an environment which will not fluctuate between night and day and which stays approxmatly 65-70 degrees. Allow to sit undisturbed for a minimum of one week. 3. After the minimum allotted time, use a sanitized pipette or siphon to gather a small sample of beer for a hydrometer reading. The desired gravity should be close to 1.010. Test the beer the course of three days to ascertain if the readings have reached this number or have stopped falling. BOTTLING 1. Place your fermenter on an even countertop and allow the beer to settle for 24hrs. 2. Clean and sanitize either 24 24oz bottles or 48 12oz bottles and bottle caps. (Renegade Brewing Supplies recommends completely immersing and soaking each bottle and bottle cap to be used in the bottling process in Star San solution. Using recycled bottles is recommended but be extra cautious during the cleaning and sanitizing to remove all debris and residue. We have found that using PBW (Powdered Brewery Wash) is an effective means of removing debris and label residue from recycled bottles. 3. Sanitize all equipment to be used during the bottling process, including bottles, caps (we recommend oxygen absorbing caps), siphon, racking tube/cane, bottling bucket, spigot, and any other equipment you’ll be using. 4. Rack the beer from the fermenter to the bottling bucket. 5. Place the siphon in your bottling bucket at a slight angle, raising the bottom of the siphon from the bottom of the bucket about 1.5in. If you are using a bottling bucket equipped with a spigot, attach the sanitized tubing and racking cane to the spigot. 6. Add the provided priming sugar to the bottling bucket and gently stir the solution. The sugar can also be added as the bottling bucket is being filled from the fermenter. 7. Start the siphon and use the racking cane and bottle filler to fill each bottle to roughly 1in from the top. Place a sanitized cap on the bottle and use the bottle capper to seal the bottle. 8. Place the bottles in a cool dark space with a consistent temperature of 70℉. (We recommend keeping the original packaging from the bottles and storing them in the same boxes while they condition.) 9. Allow 2wks for conditioning while the bottles begin to carbonate. Once carbonation is complete, the bottles can be moved to the refrigerator. 10. Grab a bottle opener and enjoy your beer creation! *There will be some sediment at the bottom of the bottle. This is completely normal, as yeast from the conditioning has fallen out of suspension.
