Current state-of-the-art of
postharvest technologies
• Extended period of cold storage
• Automated process for extracting the
pomegranate arils
• Production of a high-quality
pomegranate juice and wine from arils
• A new product – frozen arils
• Preliminary work for producing food
additives and cosmetic products from
the seeds & rind

Arils extraction
7 years ago the issue of
relieving the pomegranate
arils was solved!
After a concerted effort of R&D at
the Institute of Agricultural
Engineering in Israel, a unique and
novel technique was developed for
extracting the pomegranate arils

Commercialization
The extraction system is
manufactured by “Juran Metal
Works” in Israel and is being
offered in different configurations.
More than 30 systems were sold
worldwide.

Pomegranate Utilizations
• The whole fruit for decorations
• Consumed as fresh fruit
• Consumption of “fresh-cut” arils packed in
MAP packages and stored on chilled shelves
• Fresh juice from the whole fruit
• Fresh juice from only the arils
• Wines, liquors, Juice concentrates
• Frozen arils
• Food additives, medicinal supplements,
cosmetic products (produced from the fruit’s
arils, seeds & peel)
• Red dye (antocyanine) for the food industry
• processing of hides

Remaining technological
gaps & future challenges
• Extending the storage period of arils
• Eveloping a non-destructive internal
quality sorting machine
• Different processes should be
developed for the utilization of the
arils, juice, seeds and rind for a variety
of food suplements & cosmetic
products
• Continuing the medical research
The challenge is big!
Will the industry rise to meet
the challenge?
