The Restaurant at Southern New Hampshire University Enjoy exquisitely prepared cuisine from around the world at Southern New Hampshire University’s student-run, fine-dining restaurant, The Quill. Our Culinary Arts students prepare and serve classical French, European, Iberian, Middle Eastern, and Far Eastern cuisine. Traditional Italian cuisine will be featured for lunch during the fall semester. Wednesday night dinners feature special menus by various junior and senior level classes and showcase our seniors. The restaurant is open Tuesdays and Fridays for lunch and Wednesdays and Thursdays for dinner. Prix fixe and tasting menus feature appetizers, soups and salads, entrees, and desserts that will thrill your palate. The History of The Quill The restaurant’s name, The Quill, evokes the history of the university, which was founded as a school of accounting in the early 1930s. The Culinary Arts Program was started as the Culinary Institute over 30 years ago with a class of 12 students. Since then, the program has grown to over 250 students seeking either an A.S. or B.S. degree. Our students have gone on to own their own local restaurants, including Oro, Saffron Bistro, and Catalyst; and bakeries including Patisserie Blue and Cookies by Design. They have worked for some of the most notable chefs in the world, including Tom Colicchio, Mario Batali, Thomas Keller, Barbara Lynch, and Ming Tsai. They have also been featured on TV and radio. The instructors at SNHU come from all over the world. For example, Classical French is taught by American Academy of Chefs’ Stefan Ryll from Germany, and Chef Brigid Flanigan got her start in NYC and is an award-winning member of Women Chefs and Restaurateurs.
