Red Varietal Description
The wine of Kings, the King of wines. A wine that evokes legend and fascination with its
brilliant garnet-red and flashes of ruby. The bouquet is both pleasing and intense with its
aromatic note of violets and oregano. Smooth in the mouth with crisp acidity, its firm but well
integrated tannins give good length on the palate. It is a wine that exudes glory and nobility.
Barolo
Cabernet
Sauvignon
Old world varietal in the new world, from extremely old vines. Full ripe berry and blackcurrant
with a herbal character. This wine is full bodied with solid tannins, yet it is surprisingly
smooth with an extremely long finish. Pairings: grilled meat, cured meat, strong cheeses
(very old cheddar, aged parmigiano etc)
Castel del Papa
Related to Châteauneuf-du-Pape, it is distinguished by its intense deep-red, virtually black
color. Good tannins, medium acidity and high alcohol level are all noticeable characteristics.
Experience richness and fullness as the aromas of nutmeg and cocoa fills your glass. You
will be conquered by the flavor of its ripe, small berries and lavender notes.
Chianti
Rich and full this traditional Italian wine is truly from the old school. The wine possesses that
lively attack expected from Chianti but finishes with deep berry flavored smoothness. A
robust red wine, in the style of Italy’s coveted Tuscany region, with deep ruby and violet
reflections. This complex wine exhibits hints of spices and black cherry notes with just a hint
of dark burnt chocolate and homemade jam.
Malbec
This Chilean favorite, offers a deep garnet robe. The flavors are of intense, ripe, red fruits
with a hint of cinnamon. The well-balanced oak only enhances the wines characteristics.
Pairings: Grilled lamb, venison, and Mexican dishes.
Merlot
Rich with soft, smooth tannins and blackcurrant undertones with an underlying pepper nose.
The “smokey” oak flavours add to the wines subtle softness. Its long, full, elegant finish will
leave you wanting more. Pairings: rich sauce pastas, grilled veal and pork
Montepulciano
This Italian classic has a deep ruby robe with violet reflections. It is a complex bold wine with
soft peppery tones and nuances of spice all wrapped up in a velvety texture. This wine is well
structured for ageing in order to provide you with a finished wine that can be truly savored.
Nero D’Avola

Valopolicella
Native to Sicily, it is one of the island’s best-known red varietals. Nero D’Avola has great
distinction with complexity, richness and texture. The predominant bouquet is of ripe black
cherries with an ever so slight ripe banana nuance.
A wine for today. Be on the lookout for its new taste sensations. With purple-ruby flashes
and violet rim, the complexity of its bouquet brings together notes of eucalyptus and black
currants. Its good acidity and firm tannic base gave richness and a fine freshness. The
intense fruit on the palate follows the direction of the menthol, aromatic nose. This is a wine
for discovering, tasting and sharing.
This refreshing, complex, medium bodied wine has a delicate bouquet and a rich texture.
Fragrant and fruity with an explosion of red tree fruit and ripe red berries. This wine
possesses solid tannins and acids that delight the palate. This wine is a versatile
accompaniment for large dinner parties, a wine to be enjoyed amongst good friends.

White
Moderate yellow or white, impressive nose dominated by peach and apricot aromas and a
subtle hint of pear. Light taste with persistent fruit flavors, known for its excellent liveliness
and good acid finish.
Chardonnay
An elegant wine with rich aromas of honey, tropical fruits and ripe apples off the tree. Its rich
varietal character is enhanced and not overpowered by the smooth oaky finish. Pairings:
chicken, fish, pasta.

A subtle wine made with Pinot Noir and a blend of blackberries and cherries. This wine has a
silky mouth-feel, medium bodied with hints of citrus. It has a very pleasant, lingering
blackberry finish with aromas of cherries. Serve as a social wine, or with desserts like
cheesecake, tortes, bittersweet chocolate and cheeses.
A delightful blend of Merlot and raspberries make a very rich and medium bodied wine,
bursting with luscious raspberry flavor and smooth raspberry aromas. Can be served as an
after-dinner liqueur accompanied by a rich chocolate dish such as fudge or black forest cake.
Also delicious drizzled over ice cream or cheesecake.
Another Chardonnay but this time with the taste of the tropics. With rich aromas of honey,
tropical fruits and ripe apples off the tree. Its rich varietal character is enhanced and not
overpowered by the smooth oaky finish.
A soft blend of various wild berries and Zinfandel for a delightful rosé wine that reminds of
the taste of summer. Medium bodied with delicate fruit flavors and aromas. Perfect for
drinking on its own, with a salad or with after dinner sweets.
