Grandfather John (Hans) Dauwalder, trained as a master cheesemaker in Switzerland, came to
the US in the 1920’s. After several successful years working at
Bunker Hill Cheese Co-Op, he
returned to Switzerland to marry
his love Lili Mueller having two
children, Peter & Marguerite. In 1948, they returned to the US to join
their brother Crist who had purchased Bunker Hill Cheese. In 1962,
son Peter and his wife Nancy acquired Bunker Hill Cheese. Today it
is one of the premier cheese retailers east of the Mississippi River, and
one of the most successful wholesale manufactures serving clients all
over North America.

Being born in Shanghai, graduating
from UC Davis in finance and international relations, working for Bank
of America on the foreign stock exchange trading floor, Cassandra
Chen left it all to find her true happiness surrounding herself with Foodies!
On a whim, she walked into Vertigo Restaurant and asked
for a job. She was hired on the spot and told to train that
night on the pastry line.
Later she moved to Marin County and had some children.
When her youngest started pre-school, Cassandra decided
to take the caramel corn she’d been making for family and
friends to a commercial level.
Cassandra sources only local products, buying organic yellow popcorn from the Sacramento area, and the almonds
come from a valley grower she knows.

The benefits of honey go beyond its great taste.
Honey is a great natural source of carbohydrates which provide strength and energy to

Its natural sugars play an important role in
preventing fatigue during exercise. The glucose in honey is absorbed by the body quickly

Jarlsberg is cold-smoked over smoldering hickory chip embers, infusing its mild, mellow and nutty flavor with a subtle smokiness. The natural production process also gives
the cheese surface a distinctive light caramel color.

In 1865, Mr. Pietro Defendi’s dairy farm
began making fresh cheese for local
products back in Italy. The production
was later expanded by his son, Salvatore
who also enlarged it using milk produced
by other dairy farms but always keeping
to the artisan way. The present owner, Mr. Luigi Defendi
transformed the business into a large scale industrial activity,
raising the quality of the products in the process.

Montasio was born in Carnia. The cheese originated about 300 years ago around the Carnian Village
of Tolmezzo, supposedly the invention of a lonely
Alpine monk. It has unique characteristics from the
result of three basic ingredients.

Sapori di Corbara Tomatoes
The Corbara tomato also known as Corbarino is a product that is still grown in the traditional way, by hand
and with love. Ancient origins is a small tomato-shaped
bulb. Some say they are the son of the glorious San
Marzano tomato. These baby tomatoes are grown exclusively on the volcanic soils on the slopes of the
Monti Lattari, in Campania Italy.
