Investigating emulsions.
Aim: Compare the times taken for a mixture of oil and water to separate, when using different
amounts of egg yolk as an emulsifier
Apparatus
vegetable oil
2 x 250 cm3 beakers

Method:
1. Put 25 cm3 of oil in a test tube.
2. Put 15 cm3 of water in the test tube.
3. Add no drops of egg yolk
4. Put a bung in the test tube. Shake gently for 15 seconds.
5. Put the test tube in the rack and start the timer.
6. Stop the timer when the water level reaches the 1cm mark.
7. Write down the time taken in your table.
Then repeat the experiment using 1, 2, 3 and 4 drops of egg yolk.
