Reading Comprehension
In the late fifties, the average American housewife spent $4.50 per day for a
family of four on food and 5.15 hours in food preparation, if all of her food was
home prepared; she spent $5.80 per day and 3.25 hours if all of her food was
purchased partially prepared, and $6.70 per day and 1.65 hours if all of her
food was purchased ready-to-serve.
Americans spent about 20 billion dollars for food products in 1941. They spent
nearly 70 billion dollars in 1958. They spent 25 percent of their cash income
on food in 1958. For the same kinds and quantities of food that consumers
bought in 1941 they would have spent only 16% of their cash income in 1958.
It is obvious that our food does cost more. Many factors contribute to this
increase besides the additional cost that might be attributed to processing.
Consumption of more expensive food items, higher marketing margins and
more food eaten in restaurants are other factors.
The Census of Manufacturers gives some indication of the total bill for
processing. The value added by manufacturing of food and kindred products
amounted to 3.5 billion of the 20 billion dollars spent for food in 1941. In the
year 1958, the comparable figure had climbed to 14 billion dollars.
