Revised Menu for K-5
The original elementary school menu already has a variety of textures and tastes.
The main allergens I changed on the menu was the option of almond milk instead of 1%
milk or nonfat chocolate milk, and an option for gluten free muffins or white bread.
Many of the food options in the elementary school level consist of the same colors.
For example, pizza, ham and cheese sandwich, and bean and cheese burrito (all offered on
Monday) have a brownish and yellow color to it. Local fruit is offered, which depends on
the fruit that is in season that month. The fruit would be the main additive to the meal to
give it some color. On Tuesdays, a chili bowl with cornbread is offered as well as pizza and
a corn dog. Again, these colors are a similar brown yellow. The chili bowl will give some
darker red color but will not give the same affect as a green vegetable would.
Throughout the week the color context of all the foods are close to the same. This
seems like it would cause some uninterested students at lunchtime because they are not
bright and fun looking foods. On the other hand, this could cause some students to be
excited because they don’t have to eat bright colored foods, such as vegetables.
The texture of each food is a little different. The bean and cheese burrito will be soft
and mushy feeling, whereas a hot sandwich will have a crunch to it from the toasted bread.
Pizza will have a soft texture as well as the macaroni and cheese. Most of the foods seem to
have this kind of texture to it, possibly because they are younger students who may have a
higher risk of choking.
Offering more options for those who may have allergens could potentially increase
the likability of the new menu. Students who could not have certain foods before may be
more willing to try the allergen approved foods. The original menu did a good job of not
including too many high allergen foods except for those with gluten intolerance or lactose
intolerance. Technically these are not allergies, but some students may still not eat the food
because of their intolerance.
If I were to redo the whole menu, I would give more options of fruits and vegetables.
Even if the student may not choose to eat it, at least a larger variety of healthier foods
would be accessible to them.
Revised Menu for 9-12
The original high school menu had a lot more options on it than I expected. The
school district did a good job on not including too many allergen prone foods. The main
foods I changed on the menu were the options of almond milk and white bread, for those
who cannot consume milk, gluten or wheat.
Between the elementary school menu and the high school menu, they were the same
on the menu changes. The high school menu had a wider variety of food options, as well as
colors and textures. The high school menu offered a pork burrito, BBQ pulled pork
sandwich, turkey, bacon, and pesto cream cheese wrap, honey fired chicken bowl, and a
chicken fajita salad in the same day. Each food item contains different colors and textures
to them, providing more interest for students to eat them.
The pork burrito and BBQ pulled pork sandwich are both brown in exterior color
and have a soft mushy texture to them. The honey fire chicken bowl and chicken fajita salad
will contain lots of colors and crunchy texture from the lettuce. A turkey, bacon, and pesto
cream cheese wrap will contain lots of flavors in it as well as color.
On other days of the week the menu consists of chili bowl and cornbread, hot dog on
a wheat bun, hot pastrami and cheese sandwich, burrito, beef fiesta salad, and turkey gravy
over mashed potatoes. There is a mixture of crunchy texture from the hot sandwich to a
soft texture from the mashed potatoes. Students have various choices for their lunch menu,
hopefully making lunch more interesting for them.
The high school menu also offers 7 kinds of pizza each day, consisting of cheese,
pepperoni, veggie, and meat lovers. It makes sense that the high school would provide a
wider variety of food than the elementary school due to more exposures to tastes and
textures. High school students have had a longer time to experience more food and are able
to eat different foods because choking isn’t as much of a hazard.
I really like the high school menu, I’m not sure if I would change much about it.
There are lots of options for those who may have allergies, that it doesn’t seem like it would
be a problem to eat lunch at school. I think the high school menu has high potential for
likability since there are all sorts of varieties of meals during breakfast and lunch.
