INTRODUCTION
Carotenoids are a class of natural fat-soluble pigments
responsible for the red, orange and, yellow colors of plant
leaves, fruits, and flowers, as well as for the color of
feathers, crustacean shells, fish flesh and skin, etc.
In nature, over 620 carotenoids have been identified and
characterized, but it seems that only up to 50 dietary
carotenoids from fruits and vegetables may be absorbed
and metabolized by human.

Natural carotenoids have similar molecular structure than
synthetics, but natural carotenoids differ on molecular
structure providing major benefits to health. Industrial
production of natural carotenoids can be carried out
through to:
-Biotechnological processes using filamentous fungi,
yeasts, bacteria or microalgae,
-Solid-liquid extraction from plants.
Carotenoids are important factors in human health. The
essential role of beta-carotene and others as the main
dietary source of vitamin A has been known for many
years.
More recently, carotenoids have been considered as
powerful antioxidant. Protective effects of carotenoids
against serious disorders such as cancer, heart disease
and degenerative eye disease have been recognized and
have stimulated intensive research into the role of
carotenoids as antioxidants and as regulators of the
immune response system.

GENERALITIES
Beta-carotene is one of the most common
carotenoids and is used widely in the food industry
as a food coloring. Carotenes can be extracted from
a number of sources including algae, carrot and
palm oil, or produced by the fermentation of microorganisms.
Beta-carotene holds unique properties as a colorant,
physiological antioxidant and provitamin A. This
versatility means that it is used across many different
segments, which include food, feed, supplements
and cosmetics. Each segment demands different
properties and stability of the beta-carotene
formulations, which has led to the development of
three major product groups:
-Oil suspensions
-Powders
-Beadlets
-Emulsions
Natural β-carotene has better physical properties
than the synthetic entity in the presence of two
isomers, the trans isomer and the 9-cis isomer.
Synthetic b-carotene contains only the fully trans
isomer, which has lower liposolubility and antioxidant
activity than the 9-cis isomer, which is found
exclusively in the natural environment.
