SHORT BIO
Jessica Hudson is from Houston, TX and is finishing her first year of her master’s
program at Texas A&M, where she also completed her BS in Food Science
and Technology. Jessica’s master’s degree is in Food Science and
Technology, and her research is focused on food safety and microbiology.
After completing her graduate program, she plans to utilize her food safety
background in the food industry.

RESEARCH OBJECTIVES
Factors testing the effectiveness of beef carcass lactic acid
inter ventions to reduce STEC8: Effect of lactic acid brand,
b e e f s u r f a c e t e m p e r a t u r e, a n d t h e u s e o f a n e u t r a l i z e r
Objectives: To determine the effect of a neutralizing step, the brand of lactic acid
to be used, as well as the effect of different contamination temperatures on the
outcome of challenge studies to determine effectiveness of lactic acid interventions
against STEC8 on beef carcass pieces.
