Jessica’s master’s degree is in Food Science and Technology, and her research is focused on food safety and microbiology. After completing her graduate program, she plans to utilize her food safety background in the food industry. Start date: January 2014 Finish date: December 2016 RESEARCH OBJECTIVES Factors testing the effectiveness of beef carcass lactic acid inter ventions to reduce STEC8: Effect of lactic acid brand, b e e f s u r f a c e t e m p e r a t u r e, a n d t h e u s e o f a n e u t r a l i z e r Objectives: To determine the effect of a neutralizing step, the brand of lactic acid to be used, as well as the effect of different contamination temperatures on the outcome of challenge studies to determine effectiveness of lactic acid interventions against STEC8 on beef carcass pieces.
