Quinoa and Red Bean Salad
Ingredients:
2 cups quinoa( either red or brown)
2 cups water
4 cups cooked kidney or aduki beans(I used canned)
1/2 cup roasted sunflower seeds
1/4 cup roasted sesame seeds
2 stalks celery, chopped
2 scallions chopped
2 tbls. fresh parsley minced
1/4 cup Safflower or other oil
1/4 cup fresh lemon juice
2 tbls. soy sauce or to taste
2 cloves minced garlic
Rinse quinoa. Bring 2 cups water to boil and add quinoa and simmer 15-20 minutes. Mix oil,
lemon juice and soy sauce. Crush garlic and add to oil mixture, & mix well.
Place quinoa in bowl; add chopped veggies, cooked beans, and dressing mix.
Mix well with sesame and sunflower seeds.
Can be served warm or refrigerated for a cold salad.
Serves 6-8.
