DOMINIQUE
CARNOVALE METCALFE
Executive Chef Dominique Carnovale Metcalfe brings a world
of experience home to Levy. After graduating from the IUP
Academy of Culinary Arts in 1993 where she was named ACF’s
Junior Chef of the Year, she began her professional career in the
kitchens of the Grande Hotel on Mackinac Island, Michigan and
The Breakers in Palm Beach, Florida.
Dominique then took her career abroad, apprenticing at Au
Premier in Zurich, Switzerland where she spent time in the
butcher shop, Garde Manger and kitchen. Dominique left Au
Premier with both Chef de Partie Saucier and Chef de Partie
Entremetier titles. She relocated to the United Arab Emirates,
serving as Chef at the Hyatt Regency Dubai. Dominique later
became the first American employed by the largest convention
center in the southern hemisphere, the Sydney Convention and
Exhibition Centre, where she managed 30 cooks and served
dinners for up to 5,000 guests. In 2001, she spent time in
Tuscany at the Italian Culinary School for Foreigners, honing
her skills in traditional Italian cooking.
Upon returning to the United States, Dominique served as
Restaurant and Banquet Manager for the Oxford Athletic Club
in Pittsburgh before joining Levy at David L. Lawrence
Convention Center in 2003. In 2004, she was promoted to
Executive Sous Chef and named Executive Chef in 2008. One
year later, the DLLCC opened its doors to the G20 Summit,
where Dominique led a culinary team of 40 Chefs, showcasing
the region’s flavors to world leaders, delegates and media
members.
