Dish and General Utility
This position is responsible for maintaining cleanliness and sanitation standards for china,
glassware, tableware, cooking utensils, etc., using machine and manual cleaning procedures.
This position also maintains the dishwashing, pot washing, mop sink, bathrooms, and other areas
in a clean, safe and sanitary manner. The trash cans are to be emptied on a regular basis and both
inside and outside of the containers kept clean and odor free. Dirty linens are taken to Sitex
Linen bins and a new linen bag put in place immediately. The floors in the kitchen, prep areas,
bathroom and dining room are also maintained throughout the shift. Particular attention is to be
paid to spills which can become safety hazards.
This position will also complete the Food Handler’s Safety and Sanitation Class held by the
Metro Nashville Health Dept. and is held responsible for following these rules and regulations.
Essential Functions:

Prior to each shift, check all supplies and chemicals. Wash your hands and wear a fresh,
clean apron.
Sort and rinse dirty dishes, glasses, tableware and other cooking utensils and place in
racks to send through dish machine.
Sort and stack clean, dry dishes and trays. Properly store these items, checking that all
items are clean and dry.
Change dishwater in dish machine as needed.
Wash pots, pans and silver serving trays by hand.
Take trash and garbage to dumpster, compost or recycling bin.
Set up or break down dishwashing area: wipe down dish machine and all sinks, run
garbage disposal and put all dirty towels in linen bin.
Clean floor mats.
Fill/empty soak tubs and sinks with cleaning/sanitizing solutions.
Sweep and mop floors.
Assemble/disassemble dish machine. Check chemical levels.
Maintain trash around loading dock and dumpster areas.
Notify manager any time dish machine temperatures rinse cycle falls below 180 degrees.
Restock server items as needed: trays and coffee cups in particular.
Assisting with kitchen prep when needed.
Security is now a priority issue: keeping doors locked and watching the property is
paramount.

Work Environment:
This job often operates in as fast paced manner when multi-tasking and prioritizing are a
necessity. Scarritt Bennett Center is a team oriented organization, meaning everyone is
encouraged to ask for and provide help as needed.
Physical Demands:
To successfully perform the essential functions of the job you must be able to sit; climb and
balance, bend, stoop or kneel. Moving objects 50 pounds or more is also a requirement. Specific
vision abilities include close and distance vision, color, peripheral vision, depth perception and
ability to adjust focus.
Position Type/Expected Hours of Work:
This is an as needed position. Working some weekends, late nights and occasional holidays will
be required. Days and hours vary according to business needs. A flexible schedule is encouraged.

uphold the Food Services Attendance Policy
Required Education and Experience:


Ability to read and comprehend labels on chemicals.
Six months experience in a commercial kitchen, or high school diploma/GED required.
