Scenario One
The supervisor of Evergreen Terrace is worried about the choice
residents are making when choosing food from the menus. Mrs Garrett
wants to promote healthy choices to promote the health and well being of
the residents and is aware that the residential home needs to provide
information in order for residents to make an informed choice in relation
to meals. Mrs Garrett has asked you to produce a number of resources
that could be displayed to promote healthy food choices.
Scenario Two
ABC nurseries have to ensure the food provided is healthy and meets the
nutritional requirements needed for children from birth to five years of
age. The nursery has to ensure that the food is cooked and served in a
safe and hygienic way. Your job is to provide training resources to ensure
all staff are aware of these requirements.

Prepare a set of reference cards for the canteen staff, identifying the
components of a balanced diet and their food sources. (P1)
On the reverse of each card discuss how the components of a balanced
diet can help an individual to maintain good health at different times in
their life by explaining why the components vary according to the life
stage. (M1)
Research Task – What makes up a balanced diet during each separate life
stage? (P2)
Make a wheel of life identify the different life stages and the different
components of a balanced diet needed at each life stage. (P2)
Prepare an A4 glossary sheet of definitions with images that can be
displayed on the wall. You need to start your list with:

In a small group discuss which medical conditions can be related to
unbalanced diets. Make notes during the discussion and then make a list
to identify these conditions. (P3)
Individually research two of the conditions and then produce a leaflet for
canteen workers and students which explain how unbalanced diets can
result in the development of these two conditions. (P3)
Using the information gained and through the use of case studies identify
two service users at Evergreen Terrace or ABC nurseries that have
specific dietary needs (P4)
Outline a two day diet plan for each service user with specific dietary
needs (M2) and justify how the two day diet plan meets their specific
dietary needs (D1)

Outline and summarise the relevant legislation in relation to preparing,
cooking and serving food using your legislation handbooks (P5)
Research the safe practices necessary when preparing, cooking and
serving food. (P6)
Using your research, prepare a poster that can be displayed in the
Evergreen Terrace kitchen, that explains safe practices necessary in
preparing, cooking and serving food at Evergreen Terrace. (P6)
Produce a report that discusses the effects of unsafe practices when
