Chicago – June 8, 2011 -- The mere mention of Mexico’s sun-soaked Baja peninsula makes us dream.
Flanked by the Pacific Ocean to the west and the Sea of Cortez to the east, Baja really is Mexico’s
undiscovered “West,” with its stark desert landscapes, secluded coves and striking mountains.
Recently, some of Mexico’s most talented chefs have fostered a dazzling “Baja Med” cuisine in the
restaurants of Tijuana and Ensenada. In addition, the wineries of Baja California Norte are producing
world-class, award-winning wines. Paired with the region’s phenomenal seafood, the cuisine of Baja
ranks among Mexico’s finest. For celebrity chef Rick Bayless and his production company, Frontera
Media Productions, this vibrant region provided the perfect subject for the new season of his popular
weekly series MEXICO – One Plate at a Time. Season 8 – Astonishing Baja – premieres Saturday,
September 17 on public television stations nationwide (check local listings).
For seven seasons, the critically acclaimed series has brought to life the foods, the flavors, the stories
and the fun of Mexico for public television viewers across the country. In each episode, Bayless
effortlessly tosses together many ingredients: cooking demonstrations, cultural musings, exotic
locations, ideas for home entertaining and a generous helping of off-the-wall surprises, whipping up a
whole new kind of cooking program that mirrors the diversity and depth of Mexico.
In 13 all-new episodes, Rick takes viewers from Tijuana to Cabo San Lucas to explore the cuisine and
culture that makes this astonishing region of Mexico completely irresistible. Among the unforgettable
experiences offered this season will be a taco tour of Tijuana, “off-the-beaten-path” restaurants in Los
Cabos, sustainable fishing with local fishermen in Punta Abreojos, the coolest wine school in Mexico,
Ensenada’s lively fish market, examples of fine artisan cuisine, and much more. And as always, Rick will
bring you demonstrations from his home kitchen that help to translate the dishes from Baja’s most
progressive cooks into everyday enjoyment, in everything from easy, casual dinners to full-blown
parties. To enjoy special behind-the-scenes footage from the filming of season 8, please visit

Rick Bayless is the winner of America’s highest culinary honor: the James Beard Foundation’s National
Chef of the Year (1995). His influential cookbooks have garnered him critical praise as well as several
national awards. Memorably, Rick was also the winner of Bravo’s Top Chef Masters, where he outshone
some of the country’s best and most well-known chefs. In addition to writing and television, Bayless still
remains active in his Chicago restaurants, the internationally renowned Frontera Grill and Topolobampo.
