Kellam’s Corner: We hope everyone has a fun and safe Memorial Day
holiday. I just returned from the annual Virginia State Bar’s Tech Show
in Richmond to keep abreast of the ever-developing available tech
solutions to better serve our clients. As to the firm, we’ve got a few
exciting things on the horizon and we look forward to sharing these in
the next few months.
On the personal front, Avery just wrapped up her first year at ODU
and is excited about the continuing opportunities and challenges with
the dance program.
Our little demon, a/k/a Obi-Wan (our newest
mini-dachshund), turned one this month and I’m glad to say seems to
be settling down a bit as he transitions from a puppy.

May means Strawberries and time to go pick them fresh in the fields of Pungo. I love a nice warm red
berry straight from the plant to my mouth. My favorite fresh strawberry creation is the cold pie like
Shoney’s use to serve. My best friend’s mom, Natalie Gilliland, made the best pie I have ever tasted.
I cannot make a pie crust worth anything so I must buy mine and brown it per package directions. Be
sure to wash your berries, whole, and let dry on paper towels before adding to pie shell or your pie
will be runny. Place dry, washed berries in cooled pie shell with points up, which may require a little
arranging. Take three Tbsp corn starch and a tish of water to make a pourable paste, set aside. Over
medium-high heat, bring 1 cup water, and 1 cup sugar to a rolling boil. Add cornstarch to thicken and
then add ¼ cup strawberry Jello powder and a pinch of salt. I usually make two pies at once, so I
double the recipe. I set my pot in a bowl of ice water in my sink, to help cool it down quicker, stirring
it occasionally until cool enough to pour over berries. Refrigerate, add whipped cream and enjoy! All our

On The Local Front
THE REVITALIZATION OF WATERSIDE
Well, the wait is finally over. Earlier this month, the new Waterside opened, and overall, people seemed to approve of this most recent version! This is the third reboot since it opened
in 1983. May 4th was a “soft opening” of the updated food and entertainment complex and
patrons offered some positive reviews. Some commented on the lively energy and variety of
restaurants, others mentioned that they put a lot of thought into the lay out, and still one person commented on the “communal” feel, saying that you might end up talking to someone
that you wouldn’t normally get to otherwise.
Waterside stayed open through the weekend; however, closed unexpectedly the following
week for a few days without any real explanation from officials. It then re-opened for the
official grand opening on May 11th which included a free live performance from Weezer and
Kellam’s family’s newest family dog, Obi-Wan
(a/k/a “Little Man”) turned one this month.

time in the cold rain.
There are more than just a few reasons to stop in at Waterside if you haven’t done so yet.
From Guy Fieri’s restaurant, to Star Hill’s beer bar offering over 40 types of beer, and The
Fudgery, Stripers, and more. This new Waterside District has something to offer for everyone
and looks to be a great addition for Norfolk.
Geri traveled to Tahiti last month to island hop
on a friend’s catamaran. The marine life was
spectacular and swimming with the sharks
was one of her favorite experiences. Bora Bora
definitely lived up to it’s reputation for beauty and friendliness, but Huahine and Moorea
were her favorite islands.
Wine Review
This month, I’m (Kellam) sharing my favorite white wine. I’m a huge fan of New Zealand Sauvignon Blanc.
A NZ Sauvignon Blanc will be a dry, tart wine. It has favors of lime, green apple, and peach. It pairs excellently
with sour cheeses (e.g. goat), white meats and fish, and green herbs. If you get a more mature bottling, the acidity will be more mellow. I’ve found a NZ Sauvignon Blanc to be more tart (my preference) than that of California
(and there is also France, Chile, and other places).
