Summer is finally here! May has absolutely flown by and June is upon us. I hope you were able to come out and
experience everything that Salina Country Club had to offer last month.
Membership – In May, I am very happy to announce that we have welcomed 9 new members to Salina Country
Club. Congratulations are in order for our Membership and Sales Director, Julie Schott. Make sure you check out
her article for a full list of the names of the new members so that you can greet them and make them feel welcome.
Golf – Randy and the Robs are in full swing, with lessons and clinics for every skill level. League play has started for
both Men and Ladies, and the Golf Shop is fully stocked. Junior Golf has also begun, and there is plenty of time and
space left to get your little golfer signed up to play.
Dining – What an incredible month for Chef Eric and his team! Burger Nights, grilling out, new menus, and of course
the famous Tasting Menus were all on display during the month. I know we are all excited to see what comes out of
the kitchen next.
The Summer Kick Off Event was a huge success! Thanks to all who were able to come out and enjoy the food as well
as the chipping contest, bouncy house, face painter, balloon artist, petting zoo, and fireworks!
Believe it or not, June is going to be even fuller. The Pool is open with a new Snack Bar menu. Now that school is
out, Junior activities really rev up. Junior Tennis and Golf are both in full swing, and there is still availability to sign
up. Mia is available in the new massage therapy room to help you recover or just melt away some stress. Contact
her directly for appointment availability. It’s also going to be a fantastic month for member events, including:


Randy’s Corner
June is another great month to be a golfer at Salina Country Club. There are
golf events and activities for everyone.
Find out just how tough the SCC course can play when you tee it up for Beat
the Pros on June 2nd. Chris will set up with the course with the most
difficult tee and hole placements. This is one of the most memorable days
of the season so you don’t want to miss it.
The summer portion of the SCC Junior Golf Program begins on June 8th and
will continue each Wednesday morning through June and July. The SCC
Junior Program includes weekly clinics covering swing and short game
fundamentals, rules and etiquette, and course play, along with the 1st Tee
program!
In addition to the regular junior program we will also have the “Tournament Prep” junior program designed
to prepare SCC kids for high school and tournament competition. Randy will be conducting the clinics each
week which will include more in depth swing and short game instruction, as well as course management
and mental preparation for tournament play. Any SCC junior looking to step up their competitive play is
eligible for the program. Junior golf schedules and sign up forms are available in the Pro Shop.
“Party at the Range” with us on June 10th from 4:00 to 6:00 pm! We’ll have food and beverages available
at the range as well as all the new Titleist and Callaway clubs available to try out. Titleist and Callaway tech
reps will also be present to help you find the perfect clubs. The Party at the Range will be followed by
Couples 9 & Dine that evening. Call the Pro Shop to sign up!
June also includes The Salina Charities Invitational on June 16, 17, and 18, followed by the Ladies
Invitational on June 21st, and much more.
Remember you can get July 4th tee times beginning on Sunday June 26th at 7:00am.

Calling All Lady Golfers!
Ladies Clinics will continue to be offered throughout the month of June. This program is great for new golfers or for anyone
wanting to brush up on their technique. Come by the Pro Shop on Tuesdays at 5:30 pm for a quick skill builder on one of the
practice facilities then hit a few holes to practice your game. This is a fun and casual activity for all!
In addition the SCC Women's Golf Association will be hosting the Women’s Golf Invitational on June 21st! This will be a fun
morning shot gun style competition with players invited from all over the state! Entry fees are $140 which includes: coffee
and muffins, cart, lunch, favors, and prizes! Entries are limited to 50 so don’t wait to sign up! Contact Cindy Buyse at

Chris’ Comments
With June starting summer, the golf season is well underway and the course is seeing more players.
By now most of you have seen the new tee signs and if you have not you should come check them
out. The crew has done an amazing job.
All the brick platforms, ball washers, and signs will be installed in the next couple of weeks. The rain
has postponed some of the projects including aerification of fairways, but I am not going to complain
because like most summers we will be wanting it next month. The greens aerification went very well
and healed up just in time for all of the tournaments. As with the greens, the fairways also went
smoothly and we plan on finishing them as soon as we can. Once all the fairways are completed, the
tees and approaches will be next on the list. We are going to continue this process on Mondays
when the course is closed until 1 pm. We do this so that the disruption is minimal and to complete the necessary maintenance
to the course. Our summer staff has arrived and we will catch up on all the detail work like keeping the bunkers and cart paths
edged, trees, ponds and curbs trimmed.
The course is shaping up nicely, and we will continue to provide you the best possible playing conditions. I appreciate all
comments you have, please do not hesitate to stop me and ask any questions. Thank you.

The Setup
Thank you to all the members who signed up for the Summer Kick off. Everyone had a great
time. Good food, music, fireworks and just good old fashion family fun.
Now that summer is officially in swing please make sure you come to visit the pool. Greg Maring
and his team along with Richard & Robert have done a great job getting everything ready to go.
Mckenzie Welsh and the Snack Bar team have some new and exciting items to serve you at the
pool. We will be adding things all summer long so please don’t be afraid to give us your
feedback if you want to see something special offered pool side.
Some highlights for June are Chef Eric’s Tasting Menu on June 15th and Ladies Night out on June
30th. Randy and his team are hosting Party at the Range on June 10 along with the Couples Nine
& Dine as well as Movie Night that evening. Another day to look out for is Pasta Night on Tuesday June 21 st. Bring the
family for our value night.
I want thank you everyone who is using the website to make reservations. You can go to the site from your computer at
home or on your cell phone. Reservations are easy at the club website for all of our special events or just a regular
reservation in the Grill Room or Johnny’s. Your reservation is just a click away so you don’t have to waste time trying to
call your reservation in.

The month of May has been busy! Some quick highlights were Burger Night, Couples 9 & Dine, and Mother’s Day Brunch; each were well
received. The Ladies Night Cooking Demo has been rescheduled for June 2 nd so stay tuned!
Please continue to give your honest feedback so we can better serve you. Keep an eye out for some minor
menu adjustments throughout the quarter. We are focusing on making regular menu changes every month,
rather than a complete menu overhaul every four months.
We will also be collaborating with the Prairieland Markets Community Supported Agriculture (CSA) programs.
By doing this we will be able to get connected with our local growers and producers of meats, cheeses and
vegetables. In supporting this platform we will be supporting our farmers to grow their business as well as
sustainable foods. So look forward to seeing some of these items on the menus to come. They also have a
food subscription program where you can choose vegetable and meat subscriptions for single and family size
pickups. This summer season will run from June to August and product is limited. So get cracking!!!!!

Ingredients
 24 medium shrimp, peeled and deveined
 4 ounces dried rice stick noodles or rice
vermicelli
 16 (8-1/2-inch) round rice paper wrappers
 1 cup mung bean sprouts
 32 medium fresh mint leaves
 32 fresh basil or Thai basil leaves
 16 small fresh cilantro sprigs




2 serrano chiles, stemmed, halved, seeds
removed, and thinly sliced lengthwise into
32 pieces (optional)
1 medium English cucumber, peeled and
cut into 1/4-by-1/4-by-2-1/2-inch sticks
3 medium scallions, quartered lengthwise,
then cut crosswise into 2-1/2-inch pieces
(white and light green parts only)
8 Bibb lettuce leaves, cut in half
Method of Preparation:
1. Bring a medium saucepan of water to a boil over high heat. Add the shrimp and cook until bright pink and just opaque, about 1 1/2 minutes.
Drain in a colander and run under cold water until cool. Pat the shrimp dry with paper towels and place on a cutting board.
2. Holding your knife parallel to the cutting board, halve each shrimp horizontally. Place in a medium bowl, cover with plastic wrap, and refrigerate.
3. Cook the rice noodles according to the package directions. Drain and set aside.
4. Place all of the ingredients in separate containers and arrange them in the following order around a work surface: rice paper wrappers, shrimp,
rice noodles, bean sprouts, mint, basil, cilantro, serrano (if using), cucumber, scallions, and lettuce.
5. Place a clean, damp kitchen towel on a work surface. Fill a medium frying pan or wide shallow dish large enough to hold the rice paper wrappers
with hot tap water. Working with 1 wrapper at a time, completely submerge the wrapper until it is soft and pliable, about 15 seconds. Remove the
wrapper from the water and place it on the towel.
6. Working quickly, lay 3 shrimp halves in a row, cut side up, just above the center of the wrapper, leaving about 1 inch of space on each side.
7. Fold the bottom half of the rice paper wrapper over the filling. Holding the whole thing firmly in place, fold the sides of the wrapper in.
8. Turn the roll so that the seam faces down and the row of shrimp faces up.
9. If not serving immediately, keep the summer rolls tightly covered with plastic wrap at room temperature for up to 2 hours. Serve with the peanut
sauce for dipping.
