The Patisserie de Paris story
After working in the local TV industry for 32 years as a Producer and Director,
Paul Zwick sold his production companies and relocated to France to study
classic French gastronomy. After qualifying at the Gastronomicom International
Culinary Academy, situated in Cap d’Agde in the south of France, he apprenticed
in two Michelin rated restaurants in Nice and Lyon. He returned to school to
specialise in French pâtisserie and attended the renowned l’école Cordon Bleu in
Paris. He worked at Maison Carretié in Beziers, one of France’s Top 100
Chocalateries and Patisseries.
After studying and working for 5 years in France and Switzerland, he returned
to South Africa to create a slice of Paris on a plate and offer some of the sweet
offerings he learnt to create.
He started trading his natural sourdough breads and pastries at the Bryanston
Organic & Natural Market in 2012 and after numerous requests from clients,
opened a patisserie and bakery in Blairgowrie on Bastille Day July 14th 2013.
ABOUT OUR BREADS
All our breads are made in-house using traditional age old techniques dating back
6000 years ago. We use the sourdough method of bread production utilising only
flour, water and salt. We create a “starter” to leaven the bread and do not use
mass produced commercial yeast.* The sourdough system starts by allowing flour
and water to mix and ferment naturally.
Long fermentations of up to 72 hours and stoneground unbleached flour
(Eureka- from the southern Cape) mixed with Oryx Natural Desert Salt underpin
the flavour and nutritious quality of our breads. We lovingly hand roll every loaf
hence the limited quantity available on a daily basis. Our bread is completely free
of additives of any kind – no preservatives, no enzymes, no enhancers.
Fortunately, slow fermentation encourages the development of lactobacilli in the
dough, which creates lactic acid, responsible for the slight sour taste of sourdough
bread. Lactic acid naturally inhibits the growth of mould and therefore we expect
our breads to last up to 3 days. Our breads also freeze extremely well because of
the lack of artificial additives which present a distinct aftertaste once bread is
thawed.
We bake our breads 7 days a week and would be delighted to slice it for your
convenience.
