Guidelines for Working in the Concession Stand
Contact Concession Stand Scheduler (Bill or Belinda Pfeifer) if you have any needs. If Bill or
Belinda are not available, Julie Mardis (Girls Games) or Sue Hott (Boys Games) will usually be
available to answer any questions or help out with any situation that may come up.
Guidelines:
- Please contact the Scheduler if you need to change your schedule or swap your times
with anyone.
- Please plan to arrive at the concession stand at least 30 before the start of the game,
and you may begin selling any food that is ready to be eaten as early as 15 minutes
before game time.
- As we have a small space to work, please only allow people scheduled to work to be
in the stand, unless a friend or family member is in assisting with food preparation
or taking money.
- Money handlers and food preparers should keep duties separate. Any person coming
in direct contact with food (hot dogs, nachos, etc.) will need to be gloved, and care
should be taken to not handle money or non-food items when gloves are being
worn.
- During the slow periods, wipe up counters, make popcorn, prepare nachos, prepare
hot dogs, or restock the drink coolers. This will save you time at the end of your
shift.
- When restocking drinks, make sure to place the warm bottles towards the rear of the
cooler, pulling the chilled bottles towards the front.
Keep the food cooking.
Ensure there are plenty of hotdogs in the warmer or pot is full.

Always keep a carafe of coffee prepared on cool days.
Keep the popcorn popper filled with pre-filled bags.
Stop cooking at about 15 minutes into the second half of the game. Keep
checking on the amount of food that is left so as to not have some to sell,
but not too much to be thrown away.
Unplug the nacho cheese warmer 30 minutes before the game is scheduled
to end (approximately 15 minutes after the start of the second half of the
last game scheduled).

Unlock doors and remove lock from cooler.
Turn on Nacho Cheese Warmer and Hot Dog Roller.
Turn on Crock Pots.
Remove Nacho Cheese container from refrigerator and place in warmer
6. Prepare hot dogs (20) by warming in microwave. Warm in groups of 5 for
1 minute for each group (Use only 1/2 pack at end of the games.) (need to
decide the method – microwave vs. roller)
6. Pop the first couple of popcorn loads and pre-fill a dozen or so bags
5. If in use - plug in coffeepot and prepare coffee using 1/8 cup scoop per 4
cups (3) 1/8 cup scoops for a full pot of 12 cups. Once fully brewed, transfer
the pot of coffee into a carafe and start the process over.
8. Put out condiments for hot dogs and coffee (ketchup, mustard, relish,
sugar & creamer).
9. Check the money box and verify there is $90 worth of change to begin.
10. Place candies, chips, etc. out on the table.
11. Open Overhead door and get ready.

Closing Checklist
Task
1. Turn off and unplug all pots, warmers and popcorn machine.
2. Unplug coffee and clean coffee pot (as applicable).
3. Remove any extra popcorn, and give away to helpers, coaches, referees,
or players
4. Offer any left over hot dogs to helpers, coaches, referees, or players.
5. Remove cheese container, cover and place in refrigerator.
6. Put away candy, chips etc., and place chocolate items in the refrigerator
7. Bring in condiments and put in refrigerator.
8. Clean and sanitize counters and machines with Clorox spray.
9. Remove and secure money from register.
10. Take out trash.
11. Sweep floor.
12. Restock refrigerators with Gatorade, Water and Soda.
13. Complete the Revenue Recording Sheet, making sure there are two
signatures present.
14. Give money box including completed Revenue Recording Sheet to Sue
Hott (Boys Games) or Julie Mardis (Girls Games)
15. Take Inventory of needed items and get the list back to the Pfeifers or to
Sue or Julie.
16. Place lock on the cooler.
17. Lock all windows and doors, turn off lights and lock doors.
