One
i) Using the internet, Local Authority and
government publications and other sources, research
the definition of sustainability.
Write out your definition clearly and provide a brief
explanation of what sustainability means:
- to you, as an individual
- in the concept of a wider community
Tutor observation of learner
carrying out independent
research.
1.1
Display your research and findings in a clear format
that can be displayed for other people to read.
ii) Explain what is meant by the term procurement.
Make a note of your explanation.
iii) Consider what is meant by the term sustainable
procurement. Think about the types of products and
items that would need to be procured in a
community setting (not a household or individual
setting); this could be your school or college, local
authority or a distinct area within your local
community.
iv) Write a list of some the items that you think
would need to be procured by the community you

have chosen and briefly explain why these items
need to be procured. Your list should include at least
SIX items.
v) For each of the items that you have identified,
provide at least ONE suggestion for procuring that
item in a sustainable way.
Write all of your findings up in the form of a short
memorandum addressed to the person responsible
for procurement in the community.

Work in groups for this task.
Design a board game that helps to explain the waste
hierarchy of:
REDUCE
REUSE
RECYCLE
You need to devise a game that will help you to
explain to other people how the waste hierarchy
works and where certain waste products fit into it.
You should produce some game pieces to represent
different types of waste e.g. plastic bottle, battery,
paint can, light bulb, leftover food etc. You might
want to draw pictures or have cue cards.
2.1
2.2
Tutors could provide
examples of appropriate
board game designs to give
learners some ideas.
For example, the board
could be a pyramid diagram
representing the waste
hierarchy. Ensure that
learners include examples of
at least FIVE types of waste
for each level of the
hierarchy.
Completed board game
The aim of the game will be for players to be able to
place different waste items onto the correct level of
the hierarchy.
It’s up to you what the game looks like and how it
works. Just make sure the rules are straightforward
and easy to follow. You will need to use your game
to educate other people about the waste hierarchy
so that they understand about recycling, reducing
and reusing.

Three
i) You have been asked by the waste management
officer at your local council to design and produce
an information pack for new residents moving to the
area. The pack needs to provide new residents with
all of the information they need about:
-
waste management facilities available in the
area
waste collection days in the area
what the local council do and do not recycle
current legislation and regulations
surrounding waste disposal
anti-social waste disposal issues e.g. littering
and fly-tipping and the penalties associated
with them.
Each learner must produce
their own completed ‘New
Resident’s Guide to Waste
Management’ information
pack.
3.1
3.2
3.3
You can work in groups to discuss the kind of
information that should be included in the
information pack and how you think the information
should be presented, but you must produce the
finished pack independently.
Team work may be helpful
during the early part of the
task to help learners develop
their ideas about how to
produce the pack and the
kind of information that it
needs to include. To
successfully complete this
task each learner must
produce their own pack.
Your information pack can take any format but it
must contain all of the information listed above.
You should think carefully about the format that you
choose to ensure that it is accessible to everyone in
the local community. For example, an internetbased pack may not be accessible for older people.
Four
Tutor observation is required
to ensure all learners
contribute to group tasks.
Work in small groups to complete parts i), ii) and iii)
of this task.
i) You have been asked to carry out a procurement
and waste audit within the school/college/
organisation’s catering department to find out how
sustainable the current catering facilities are and to
identify any opportunities to reduce waste and
encourage sustainable procurement.
4.1
ii) Write a short report of your findings and provide
at least THREE recommendations for improvement.
Learners need access to
information about food
orders etc. and opportunity
to interview catering staff.
Alternatively, tutors could
provide learners with a
fictional catering scenario.
Learner produced audit

iii) Now that you have an idea of the volume of

waste produced and the type of procurement
undertaken by the catering department, your
objective is to devise a sustainable lunch menu for
one day that will promote sustainable procurement
and reduce waste.
Your menu should include a main course and a
dessert.
In designing your menu you should consider:
- how to procure food and other cateringrelated items sustainably
- how to reduce food waste and other
associated waste
- other factors like packaging and food miles.
iv) Individually, you should now write up the menu
that you decided on in your group. Make sure you
present the menu in a clear format that can be
easily displayed. Your menu should be accompanied
by a short explanation of each of the courses, how
they promote sustainable procurement and how they
are helping to reduce waste.
the menu they devised
within their group. The
menu must include an
explanation of how it
contributes to waste
reduction and promoting
sustainable procurement.
