1 pound jumbo cooked shrimp, peeled
and deveined, chopped
2 avocados, diced
1 jalapeno, seeds removed, diced fine
1/4 cup chopped red onion
1-2 limes, juice
1-2 teaspoon olive oil
1 teaspoon white balsamic vinegar
2 tablespoon chopped cilantro
salt and fresh pepper to taste
Adjust ingredients to taste and include anything
else that looks like a tasty addition. Suggestions
include red pepper, radishes, tomatoes, and sweet
corn.
