Quinoa Salad with Kale, Apples, Almonds and Goat Cheese

Quinoa Salad with Kale, Apples, Almonds, and Goat Cheese
Dressing:
½ cup orange juice
2 Tbs minced shallots
2 tsp honey
2 Tbs raspberry balsamic vinegar
¼ tsp salt
½ tsp ground pepper
zest from one orange
¾ cup olive oil
Salad:
1 ½ cups quinoa
1 ¼ cup water
½ cup dried cranberries
2 medium apples, sliced into 1inch pieces
½ cup toasted almonds
2-4 kale leaves, thinly sliced
1 cup crumbled goat cheese
In a medium saucepan combine quinoa and water, bring to a boil. Reduce heat, and
simmer covered for 15 minutes or until liquid is absorbed.
Transfer quinoa and other salad ingredients into a large bowl and add dressing. Toss
well, add salt and pepper to taste
