Amendment #2 to RFP-294 “Campus Food Service Program”
This amendment becomes part of the Contract Documents and modifies the original bidding documents
as noted below:
1. Question: Are the summer operating days and hours the same as during the traditional academic year?
Monday-Thursday- 7:00 am to 6:00 pm
2. Answer: Yes the only time the hours change is when we are not in session.
3. Question: The RFP outlines that the days of operation are Monday through Thursday, but the food services
were open this past Friday during the mandatory pre-bid. Could you please

the number of students, faculty and staff on campus on Fridays.we will expect flexibility from our contractors when
situations change. In the past foodservices has stayed open when they determine they can at least break even.
5. Question: Has the food program been operating at a break-even point or better?
6. Answer: No, it operates at a planned loss. But our goal is always break even.
7. Question: What are the job responsibilities of the CNM employees?
8. Answer: The two CNM employees as a kitchen supervisor and dish room attendant.
9. Question: Coffee Kiosks, How many are there? Where are they located at each campus?
10. Answer: Main Campus, KC Breezeway cart opens at 7:00am and closes at 3:30 pm. Main library cart opens at
9:00 am and closes at 4:00 pm.
11. Question: What is the projection for the current fiscal year?
12. Answer: Would like to keep it at or under an $80,000.00 loss.

13. Question: Is the signage in the cafeteria CNM’s or Sodexho’s ?
14. Answer: All identification signs are CNM’s and any special promotion signs are Sedexho’s
15. Question: Since our projection is based on existing pricing, can we have a list or menu showing the current
pricing for each cafeteria?
16. Answer: Reference attached Menu pricing.
17. Question: You mentioned that all equipment (with the exception of 1 computer) is CNM’s. Is CNM responsible for
all equipment repairs and maintenance?
18. Answer: Yes, but the contractor must keep them clean and in good working order.
19. Question: Does the food provider have exclusive rights to all catering?
20. Answer: No
21. Question: The RFP mentions the current operating terms are a management fee. What is the rate originally
awarded and the current rate?
22. Answer: The original management fee was $385.00 per week, payable monthly. The current rate is $421.00 per
week, payable monthly.
23. Question: It mentions that CNM is responsible for cleaning any vents, but the Contractor is responsible for the
hood. Does imply we are responsible for the entire hood system or just the filters and the vents are the
responsibility of CNM?
24. Answer: CNM is responsible for having the hoods serviced. The contractor is responsible for daily upkeep and
cleaning.
25. Question: The RFP outlines that the days of operation are Monday through Thursday, but the food services was
open on Friday during the pre-proposal meeting. Could you please clarify?
26. Answer: Food services has altered their schedule in order to meet the demand of the increased student load and
the number of students, faculty and staff on campus on Friday’s. CNM will expect flexibility from our contractor
when situations change. In the past food services has stayed open when they determine they can at least break
even.
27. RFP date has been extended to Friday, April 2, 2010 at 3:00PM local time.
All other specifications, terms and conditions remain unchanged. Bidders are required to acknowledge
receipt of this Amendment in the space provided on page 22, Section E.
