What equipments do you need in serving wine? Bina Nusantara University 3 Wine • Wine is an alcoholic beverage typically made of fermented grape juice. The natural chemical balance of grapes is such that they can ferment without the addition of sugars, acids, enzymes or other nutrients. Wine is produced by fermenting crushed grapes using various types of yeast. Yeast consumes the sugars found in the grapes and converts them into alcohol. Different varieties of grapes and strains of yeasts are used depending on the type of wine being produced. Sometimes a winery does a special bottling and labels the wines for a restaurant. House wines are usually inexpensive wines that offer the diner an economical option to the more pricey, betterknown selections on the wine list. Give the wine list to the host Explain that the house wine available by carafe or glass The guest makes selection from the wine list In pantry, fill wine bucket one-third full with ice and a little water Set up a stand near the table Place the wine bucket on the stand Bring the white wine bottle to the table With the base held on a folded napkin in the palm of the left hand Bina Nusantara University 8 The steps in taking beverage order 9. Show to the guest with the bottle label facing out 10. Cut the foil wrapper below the bulge on the neck of the bottle 11. Remove the foil and wipe the top of the bottle with the napkin 12. Pierce the cork with the spiral screw of the wine bottle opener 13. Hold the bottle steady and turne the opener clockwise 14. The levers of the opener lifted as the screw went into the cork. Unscrew the cork from the opener 16. Put in on a side plate beside the host 17. Filled the host’s wine glass to one-third full 18. Give the bottle a quarter turn as she lifted it away from the glass 19. Wait for the host to taske the wine 20. If the host agrees begin serving the other guests wine glasses Bina Nusantara University 10 Important phrases • Specialties (in restaurant) = certain food items that are freshly made or avaialable on that day or week • Starter = another name for the first course of a meal • The main course (entress) = the biggest part of the meal, such as meat or fish • Run out of [something] = that item is finished or used up and there is no more left • Ingredients = the different food items used to make a certain dish Bina Nusantara University 11 Note about wine • There are different types of wine bottle openers • Only while and pink wine is kept cold in a wine bucket. Red wine, in a bottle or carafe, is left on the table Bina Nusantara University 12 Important phrases • Host / hostess = [US] can also be the person in a restaurant who greets guests, shows them to a table etc. • House wine = a wine that is specially selected by the restaurant and sold more cheaply • Carafe = a glass container for house wine or water • Label = the paper stuck on the bottle that tells you all about the wine • Taste the wine = the host drinks a little wine to test the flavour.
