Palouse Soup Mix
Ingredients for Mix:
2 ½ cups green split peas (one 16 ounce package)
2 ½ cups lentils (one 16 ounce package)
2 ½ cups pearl barley (one 16 ounce package)
2 cups macaroni (one half 16 ounce package)
Directions for Mix:
Mix all ingredients together. Store in a jar with tight fitting lid. Stir
before using.
Soup ingredients:
1 cup soup mix from above
1 onion, chopped
2 carrots, chopped
4 cups water
1 cup cooked ground turkey, or other chopped meat (optional)
½ teaspoon garlic powder
1 teaspoon oregano or basil
2 tablespoons lemon juice or vinegar
1 tablespoon chili powder

In a large pan, cook meat, if using. Drain off any fat.
Add to the pan, 1 cup of the soup mix, onions, carrots and water.
Add one or more of the seasonings: garlic powder, oregano, lemon juice and/or chili powder.
Bring mixture to a boil. Reduce heat to low, cover pan. Simmer gently for 45 minutes or until peas
and lentils are tender.
Yield: Makes 10 cups of mix, 1 cup mix equals six servings.
Serve immediately; refrigerate leftovers within 2-3 hours.
Variation: Minestrone Soup: Stir one cup mix with one 16 ounce can stewed tomatoes, 2-3 cups
water, 1 chopped onion, 1 chopped carrot, 1-2 chopped potatoes, 1 teaspoon oregano, 1/2
teaspoon salt, 1 bouillon cube, 1 teaspoon basil and ½ teaspoon garlic powder. Follow cooking
directions above.
