GRAPES USED Mainly Viura, with a small percentage of Malvasia (Rioja's finest varieties for white wines). PRODUCTION The must is fermented on its lees and then aged in new oak barrels produced by the finest coopers in central France. The wine is removed from the barrel once discreet flavours of oak have blended with the wine's delicious fruit. WEATHER CONDITIONS AFFECTING THE 2007 HARVEST The weather conditions were rather uncommon. Generally speaking, winter was dry and sunny with very little rainfall. However, the amount of rain in springtime was equivalent to the annual average here in this area, whilst temperatures were lower with less hours of sunshine than usual. This delayed the vegetative cycle somewhat, made working in the vineyards more difficult and caused shatter resulting in a poor development of the grapes on the vines. As a result, the grapes were smaller than usual and the bunches less compact, which considerably reduced the risk of rot, favored maturity and regulated in a natural way the amount of grapes on the vines. Summer was very dry with almost no rainfall or storms, although with light winds and mild temperatures that dropped considerably during the night. These conditions proved extremely beneficial in that the grapes matured very gradually in the area surrounding our bodega, maintaining perfect levels of acidity with intense aromas and mature tannins. This enabled us to reach quality levels that are no doubt comparable to some of the best harvests in recent years. DESCRIPTION OF MARQUES DE CACERES BARREL-FERMENTED 2007 Attractive pearly highlights marked by dark straw-colored tinges on the edge of the glass. Fresh and lively on the nose with a depth of exotic, citrus fruit and a touch of vanilla. Diversity of flavors in the mouth that give good depth and marry well with the sweet complexity of refined oak. SERVING SUGGESTIONS An exquisite aperitif, this wine marries well with seafood bisques, all kinds of fish dishes (in sauce, pastry, grilled, souffles), shellfish, lobster, tuna, smoked salmon, sushi and sashimi. It also complements rice and pasta dishes prepared with seafood and various types of cheese. Serve between 11-12°C. First released in Spring 2008.
