Dairy
Honored
in
Westwego

In 1966, a 1200 lb., 20’ long and 15’ high dairy cow mascot
named Betsie Barbé was introduced. She became a fixture in
parades. Today, she is still used for grand openings and other
events although her parade days are over.

It all started when a teenage boy from a farming village in Southern France came to America looking for
an opportunity. It was 1908 when Victor Barbé
arrived in New Orleans, after which in 1910, his wife
to be, Lucie Gollentz left Northern France and
arrived in New Orleans. They met and got married.
Together, they bought some dairy cows and rented
land in the Uptown area of New Orleans. The area
was referred to as “Cow Patch Alley”, said Laurent
Barbé, Jr. By 1918, Victor and his wife, noticed the
Westwego area was growing rapidly so they purchased a tract of land there and moved their barn and
cows across the river by ferry to start selling milk
from their new home.
Soon the Great Depression hit. Victor did what he
could to save his land. He sold his cows and did odd
jobs. It wasn’t until many years later that Victor’s
son, Laurent or “Larry” as he was called, who had a
sixth grade education, went to war and while he was
recovering in a hospital from injuries, found a book
and educated himself on dairy science. When he
returned, he decided it was time for the family to get
back into the dairy business.
“My father built his first building in 1945. He
bought a pasteurizer, my grandfather bought the
cows, sold the milk to my father and he started bottling pasteurized milk,” said Laurent Barbé, Jr.
From the time they were in diapers feeding the
calves with a baby bottle, Larry's two son's Laurent
Jr. and Victor were always working in the dairy. In
the late ‘60s, early ‘70s, Laurent, Jr. and his brother,
Victor along with their father became even more
active in running the day to day operations. By the
mid ‘80s, the two sons had taken over the company
100% and built it to become the largest dairy in the
New Orleans area.
Laurent’s wife, Susan, says her husband, was
known as the “milk man” around the city. “I can
remember him working in the plant doing anything
that was needed, as well as driving the trucks and
making deliveries. He and his brother did what it took
to make Barbe’s the business it became.” She added,
“He would make such good friends with the customers. Everybody liked him. The cafeteria ladies at
the schools he delivered to would constantly give him
treats such as cinnamon buns and he would snack on
them while making his deliveries.”
For anyone who grew up in the New Orleans area,
the cow jumping over the moon logo for Barbe’s is a
familiar one. In the early ‘50s, one morning while
Laurent "Larry Sr." was making deliveries on Victory
Dr. in Westwego, he noticed a broken baby bed in a
trash pile next to the driveway of a home where he
was making a delivery. On the head board was
mounted a plastic cow jumping over the moon. He
was instantly inspired, so he took it out of the trash
and decided to make it the dairy’s logo. In 1966, a
1200 lb., 20’ long and 15’ high dairy cow mascot
named Betsie Barbé was introduced. She became a
fixture in parades. Today, she is still used for grand

Over time, Laurent and his brother realized their
own children did not want to take over the family
business so the two brothers made the difficult decision to sell the company to Southern Foods Group out
of Dallas, Texas in 1996. Barbe’s is now a part of
Dean Foods, the largest dairy group in the United
States. Laurent, Jr. stayed on as general manager and
continued to run Barbe’s until 2004 when Dean

Cotton Planting and Boll Weevil Eradication

state, including cotton grown in
ornamental gardens and other
non-traditional locations must be
registered with the state to be
monitored for possible boll weevil presence. State boll weevil
eradication law provides that anyone who intends to plant cotton
for non-commercial purposes
must receive prior permission
from the Commissioner of
Agriculture and Forestry Mike

“The state is officially boll weevil-free but we must monitor all
cotton grown in the state to protect Louisiana’s cotton industry,”
Strain said. “Boll weevil traps are
set along the edges of cotton
fields, but gardeners outside traditional cotton growing areas
may plant cotton, for example, to
spin their own thread for fabric.
Gardeners may also grow cotton
for its ornamental appeal. If so,
we have to place a boll weevil
trap nearby to be sure we preserve our boll weevil-free status.”
Historically, the boll weevil has
been cotton’s most destructive
pest. All cotton-growing states
have eradication programs.
Cotton
remains
one
of
Louisiana’s
leading
crops.
Although only 126,647 acres of
cotton were harvested in 2013,
record yields were achieved and
the total value of the crop was set
at almost $148 million.

Hot pepper sauce
Lemon juice
Cook shrimp in water. Boil until just pink. Drain, peel and devein
shrimp. Place in blender or food processor and mince well. Soften
cream cheese with some milk. Combine shrimp and cream cheese in
large bowl. Add remaining ingredients to taste and mix together.
Serve with crackers.
2 tbsps. sour cream
8oz. cream cheese, cut in 1" pieces
3 oz. Bleu Cheese, crumbled
Dash of white pepper
1/4 -1/2 tsp. salt
1/4 tsp. dry mustard
1/4 tsp. curry powder
Combine all ingredients in blender or food processor. Process until
smooth. Serve with vegetables or crackers.
Gazpacho with Cilantro Yogurt Topping
Vegetable Cheddar Chowder
2 tbsp. butter
1cup diced zucchini
1/2 cup chopped onion
1/2 cup diced green bell pepper
1/4 cup thinly sliced carrot
2 tbsps. flour
3 cup skim milk
1 cup shredded sharp cheddar
cheese
1/8 tsp. salt
Dash of ground black pepper
In a medium saucepan melt butter. Add zucchini, onion, green bell
pepper and carrot. Saute' until onion is tender, about 5 minutes. Stir in
flour. Cook and stir for 1 minute. Gradually stir in milk. Cook until
mixture boils and thickens. Blend in Cheddar cheese, salt and pepper.
Heat and stir just until the cheese melts. Serve hot accompanies by
crisp green salad and crusty French bread.
2 cups Yoplait Grande! 99% Fat Free
plain yogurt
1/2 cup chopped fresh cilantro
4 large tomatoes
1 large red bell pepper
2 med. cucumbers, peeled, seeded &
sliced
1 large onion, chopped
3 cups tomato juice
1/4 cup red wine vinegar
2 tsp. red pepper sauce
1/4 tsp. pepper
1 garlic clove, finely chopped
Stir together 1 cup of yogurt and cilantro; set aside. Cut 2 tomatoes, 1/2 red
bell pepper, 1 cucumber, and 1/2 onion into 1-inch pieces. Place in food
processor. Cover and process until well chopped; add remaining ingredients
and remaining 1 cup yogurt. Cover and process until well blended.
Dice remaining tomato, bell pepper, cucumber and onion; stir into soup.
Refrigerate at least 2 hours. Top each serving with a dollop of cilantro
yogurt.

Timber Theft Arrest
in Caldwell Parish
Baton Rouge, La., (May
22, 2014) - A Grayson man
is accused of stealing timber
in Caldwell Parish. Charles
Mason Adkins, 37, was
arrested
Monday
by
Louisiana Department of
Agriculture and Forestry
(LDAF)
enforcement
agents.
Adkins was booked into
the Caldwell Parish jail and
charged with one count of
timber theft valued at more
than $13,000.
Investigators say Adkins
was legally logging for a
Grayson
landowner
between December 2013
and January 2014. During
this time, Adkins reportedly
paid for 33 loads of timber.
The landowner became suspicious when he received
much less money than was
promised.
Investigators
found 11 additional loads of
timber at three different
mills.
“It was discovered that
most of the timber found at
these facilities had the
landowner’s name on them.
These loads were never listed on the paperwork submitted to the landowner,”
said LDAF Commissioner
Mike Strain, D.V.M.
The value of this timber
was $13,158.73. Adkins
was released after posting a
$6,000 bond.

“I feel fortunate to be a part of this company. The Barbé tradition of production and sales continues to thrive through
Brown’s Dairy.” In fact, you still see the cow jumping over the
moon logo, Barbe’s branding on some packaging and Betsie is
still rolling around town.
Fast forward to the spring of 2013, Laurent says he got a call
from the Westwego Historical Society about honoring his family's business. He says it was a dream come true. "Just like our
cow jumping over the moon logo, I felt like I was over the

moon to have us recognized in such a special and permanent
way. Our family was quite proud and our father would have
been ecstatic."
Now, the Westwego Historical Museum houses a display in
honor of Barbe's Dairy, which was the oldest established family business in the city of Westwego. Besides the display, they
also honored them with the official Christmas ornament for
2013 featuring Barbe's Dairy which can be purchased at the
museum.
The display can be viewed at the Westwego Historical

Dry fall, cold winter shortened crawfish season

BATON ROUGE, La. – When
fall weather is dry, and winter is
as cold and as long as it was this
year, the combination spells
problems for the crawfish industry.
That scenario put this year’s
season about one month behind,
said LSU AgCenter aquaculture
researcher Robert Romaire.
“When you get behind, it’s
really hard to catch up,” Romaire
said. “We lost a month of growing this season due to weather.”
Because crawfish growth is
temperature-dependent, those
months from November through
February are important to size
and availability.
“It was cold longer this year
than we usually expect,” Romaire
said.
LSU AgCenter aquaculture
researcher Ray McClain, who
studies crawfish at the Rice
Research Station near Crowley,
said this has definitely been an
atypical year for pond-raised
crawfish.
“Some crawfish are still being
harvested, and as is typical, har-
vesting will continue in those
ponds that are catching as long as
it is profitable,” McClain said.
The recent dry spell has caused
some crawfish farmers to end
their seasons, while others are
looking toward the Atchafalaya
Basin for the wild crop that
comes in this time of the year.
“It’s possible that a period of
cool, rainy weather could prolong
the season some,” McClain said.
But hot, dry weather spells the
end of this year’s pond crop.
LSU AgCenter and Sea Grant
specialist Greg Lutz said years
ago nobody really expected to
find boiled crawfish during winter, but now, if you don’t mind
the size, you can find boiled
crawfish during the colder
months.
“It’s a matter of economics,”
Lutz said. “If the farmer can justify going out to run the traps,
and he can get a good enough
price, he will get crawfish.”
When the weather cooperates
in the fall, it is possible to find
boiled crawfish as early as
Thanksgiving,
which
was
unheard of just 10 years ago,
Romaire said.
“During the past decade, people have been demanding and
getting
crawfish
around
Thanksgiving, but it hasn’t
always been so,” Romaire said.
“You didn’t expect to get them
until around March.
Normally, the crawfish season
would be down to the last few
weeks by now, Lutz said. “But
with the season starting off slower and the wild catch just now
really coming in, crawfish could
be available for several more
weeks before they start burrowing for the summer.”
One of the problems encountered by crawfish farmers when
the season starts slow is many are
actually rice farmers first and
crawfish
farmers
second,
Romaire said. “When it’s time to
plant rice, they can’t wait.”
Lutz said the crawfish know
what they are supposed to do and
when they are supposed to do it.
“These crawfish have been
doing this for hundreds of millions of years. When the days

start to get longer and the water
starts to get warmer, they know
that summer is coming soon, so
they’ve got to go find a place to
spend the summer, and they’ll
start burrowing down,” Lutz said.
The researchers agree that the
wild crawfish coming in now are
about the same quality as pondraised were in March.
Horse owners must prepare for storm possibilities

BATON ROUGE, La. –
Horse owners should prepare
for tropical weather instead of
waiting until the last minute
just before a storm, advised
LSU AgCenter equine specialist Neely Walker.
“Planning is the key to keeping your horses safe,” she said.
Planning can be done with
neighbors and surrounding
farm owners to identify
resources in the area. “This
includes evacuation routes, stables, feed availability and
emergency kits,” she said.
Waiting until an evacuation
is not the time to get a horse
accustomed to entering a horse
trailer, Walker said, and she
recommended practicing that
procedure. Also, vaccines
should be current.
“If you are planning on evacuating with your horse, leave early enough to prevent traffic delays,” she said. “Keep in mind that during evacuation,
management practices may change, so monitor your horses
closely for dehydration and signs of intestinal distress.”
If the decision is made not to evacuate, Walker recommends:
– A minimum of two weeks supply of hay and feed stored

in waterproof containers kept in the highest and driest area
possible.
– At least 10 gallons of water per horse per day. Plastic
barrels with secure lids can be filled and kept near animals.
– Preparing an emergency barn kit and keeping it in a
secure location with a light and batteries, rope, chain saw
with fuel and oil, handsaw, nails, screws, spray paint and
fencing materials.
– Notifying neighbors and family where you will be during the
storm.
– Compiling records for each
animal, including a photo of each
horse with a family member,
medical documents, tattoos,
microchip information, brands,
scars and any other permanent
identification, owner information
and your veterinarian’s contact
information. The records should
be kept in a secure location that
can be accessed after a storm.
Consideration should be given to
sending the material to a friend in
a location not expected to be
affected by a weather event.
– Attaching identification to all
horses, including fetlock identification tags and halter tags.
Telephone numbers can be spraypainted on a horse, and a waterproof bag containing owner information can be tied to a horse’s
mane.
– Providing hay and water dur-
ing a storm.
– Removing possible hazards from an area where horses
will be kept. If outside, allow horses access to higher
ground.
“If you are not prepared, being displaced is difficult to
manage,” Walker said. “You may be able to get back to
your property, but it may not be safe for weeks.”
