Food gets broken down and transported inside cells and oxygen is used as a way to breakdown food into usable energy. This process is called cellular respiration. Mitochondria are the powerhouses of cells that facilitates combustion of nutrients for energy inside the cells. The picture on the right shows the electron transport chain located in the inner membrane of mitochondria. NADH, which is an energy carrier, transports the energy harvested from the nutrients we ingest to build a hydrogen ion gradient using the energy from electrons being transported on the electron transport chain. The buildup of this hydrogen gradient allows for its use in synthesizing ATP(Energy currency of cells) by the ATP Synthesis proteins. The Oxygen Paradox Our bodies create antioxidants to neutralize free radicals, but often times due to our environment and lifestyle, it’s not enough. Types of Free Radicals Hydrogen Peroxide It is not toxic on its own, but produces hydroxyl radicals. Used by white blood cells to kill bacteria and viruses. Hydroxyl Radical The reaction of superoxide and hydrogen peroxide produces the hydroxyl radical. Superoxide Formed through small changes in molecular oxygen. These are later converted to hydroxyl radicals or hydrogen peroxide Molecular Oxygen The harmful free radicals are the superoxides and hydroxyl radicals which both contain lone pair electrons Hydroxyl Radical Damage Limitations of Other Antioxidants Taking regular antioxidant supplements is only slightly helpful because they: Cannot be absorbed easily by the body even at high dosages Cannot cross the blood-brain-barrier Cannot penetrate into mitochondria Cannot selectively neutralize only the bad free radicals Become free radicals themselves. Once they give away an electron to free radicals, they become free radicals themselves! Molecular Weights of Antioxidants Most antioxidants are very large molecules that the body has difficulty absorbing. Catechin Vitamin E 309 Ability of Hydrogen as an Antioxidant Antioxidants Most commonly used antioxidants are Vitamin C and Vitamin E. They are recommended only at low dosages because they become free radicals themselves after they neutralize a free radical. Vitamin C and Vitamin E need to be taken synergistically to give their effects. Notice that both Vitamin C and E donate a hydrogen and two electrons in order to reduce a free radical.
