BISON Bison meat provides protein, minerals, vitamin B12, and essential fatty acids but is very low in fat. Lean cuts of bison are recognized by the American Heart Association as a heart-healthy red meat. .............. Bison have heavy horns and a large hump of muscle, which supports their enormous head and thick skull. They have a thick mass of fur on their heads and a heavy cape of fur even in summer. This enhances their size and protects them when fighting.
