Introduction
Microalgae are microscopic algae found in marine and fresh water environments. They
are single-cell plant organisms that grow without roots, stems or leaves. They have been
on Earth for billions of years and play a vital role in the planet’s eco-system because they
consume large amounts of carbon dioxide and produce high levels of oxygen, while
providing an abundant and nutritious source of food for higher life forms such as fish.
In recent years, microalgae have earned a growing reputation as a valuable and versatile
ingredient for the human food, beverage and dietary supplement categories. Microalgae
offer a wide range of benefits in terms of nutrition and functionality, and are also 100%
vegetarian, extremely sustainable to produce and both allergen and GMO-free.
As a reflection of this, sales of microalgae ingredients for products designed for human
consumption have risen significantly in recent years. In addition, microalgae are gaining
traction in the markets for cosmetics & toiletries, pet food and animal feed.
Within the microalgae ingredients sector, the species Chlorella vulgaris – usually referred
to simply as Chlorella – is now emerging as a major force worldwide. Considered
safe for human consumption by regulators globally, Chlorella is a unicellular green alga
that exists mostly in temperate fresh water. One of the first microalgae species to be
cultivated commercially on a large scale, Chlorella is rich in nutrients – including protein,
polyunsaturated fats and several essential vitamins and minerals – and is suitable for use in
a huge variety of products that showcase its benefits perfectly.
Chlorella is already a major part of the diet in some Asian countries, and is now increasingly
finding favour in markets in the western world. A number of companies have entered the
commercial Chlorella sector, but the quality of the Chlorella biomass produced varies
enormously between producers.

Sun grown Chlorella
Portugal-based Allma supplies the highest quality, sun-grown Chlorella powder for use in
a wide range of food, beverage and dietary supplement applications. Allma’s Chlorella
is grown in fresh water at the state-of-the-art Algafarm production unit in Leiria, 100km
north of Lisbon, inside completely enclosed food-grade production systems, called photobioreactors. The photo-bioreactors are exposed to sunlight to encourage photosynthesis,
mimicking the growth of microalgae as it occurs in nature.

Sun-grown Chlorella is particularly highly valued because it is exceptionally rich in nutrients
that develop naturally as a result of exposure to the sun. However, because Allma’s Chlorella
is grown in closed production systems, there is far less risk of the contamination often
associated with Chlorella produced in uncovered ‘ponds’ that are exposed to external
elements. The closed production systems at Algafarm also enable greater control over
cultivation conditions, ensuring consistently high quality Chlorella every time.
Using gentle pasteurisation and spray-drying technology, Allma’s Chlorella is converted into
a powder that’s very easy to use in a wide range of applications, including beverages,
yoghurt, ice cream, cookies, baked goods, snacks, sauces and dietary supplements – and
many more. Beyond its outstanding nutritional qualities, Chlorella can also be used in
foods to add a natural green colour that gives a product a distinct ‘health halo’.
Allma’s Chlorella is of the species Chlorella vulgaris, which offers a rich, natural and 100%
vegetable source of protein, including all nine of the essential amino acids. It also contains
significant levels of Omega 3 and 6 oils, complex carbohydrates, phytonutrients including
lutein, zeaxanthin, beta-carotene and chlorophyll, and a wide spectrum of vitamins and

Fresh Spaghetti Pasta with
Spinach and Chlorella by Allma
Ingredients
500g of flour
4 whole eggs
100g of parboiled spinach
1 teaspoon of traditional sea salt
1 teaspoon of Chlorella powder by Allma
Directions
Spaghetti with Chlorella by Allma is delicious served with any popular pasta sauce. Place
the eggs, spinach and Chlorella powder into a blender and mix well until you have a
homogenous mixture. Add the flour and the sea salt and mix into a dough. Wrap the
dough in clingfilm and let it rest in a cool place for 30 minutes. After this time, remove
the film and stretch the dough thinly using a rolling pin. Cut into strips of spaghetti using a
pasta machine and then cook, preferably to an al dente texture.

Mayonnaise with Chlorella by Allma
Ingredients
2 egg yolks
500ml of olive oil
1 teaspoon of Dijon mustard
50ml of white wine vinegar
Traditional sea salt to taste
1 teaspoon of Chlorella by Allma
Directions
Give this popular condiment a fantastic healthy twist with Chlorella by Allma. It is perfect
with salads, fries and in sandwiches. In a blender, mix the egg yolks with the Dijon mustard,
white wine vinegar and sea salt. Slowly add 100ml of the olive oil and the Chlorella
powder until all the ingredients are blended thoroughly. Then, with the blender still running,
gradually add the remaining 400ml of the olive until you are left with an emulsion.

Muffins with Grappa and
Chlorella by Allma
Ingredients
5 whole eggs
3 egg yolks
260g of sugar
800g of flour
200g of butter
50ml of Grappa
1 teaspoon of Chlorella powder by Allma
Directions
Everyone loves muffins, and now you can add Chlorella powder to your recipe to give
them a real point of difference. To make these delicious cakes, blend the eggs and the egg
yolks with sugar until you have a creamy mixture. Pour this mixture in a saucepan with the
butter. Place this saucepan in another, larger saucepan filled with water to create a bain
marie and heat gently while stirring all the time for 5 minutes. Remove the mixture from the
heat and add the flour, Grappa and Chlorella powder to create a dough. Remove from
the saucepan and knead the dough on a lightly floured worktop. Form small balls of dough
and cook them in a preheated oven for 9 minutes at 190°C. Remove the muffins from the
oven and let them stand to cool. If desired, they can then be decorated.
