Mud Cake recipe - Wasteless Pantry

WHITE CHOC GLUTEN FREE MUD CAKE:
500g Gluten Free Mud Cake Mix
250ml Water
60ml Vegetable Oil
1 Small Egg (~50g)
75g melted White Chocolate Pieces
or DARK CHOC GLUTEN FREE MUD CAKE:
500g Gluten Free Mud Cake Mix
250ml Water
60ml Vegetable Oil
1 Small Egg (~50g)
25g Cocoa Powder
10g Chocolate Paste (Optional)
METHOD:
1. Blend Gluten-Free Mud Cake Mix and cocoa
powder well (for Dark Cake).
2. Add mixture to liquid ingredients in a bowl.
3. Mix for 1 minute on low speed using a
beater. Scrape down bowl.
4. Mix for a further 4 minutes on low speed.
5. Pour into pan and bake at 160C for approx.
50-70 minutes.
Gluten Free Muffin Mix:
Mix 100% (eg 500g)
Water 30% (eg 150ml)
Vegetable oil 30 % (eg 150ml)
Eggs 50% (eg 250g or 4 large eggs)
METHOD:
1. Add Gluten Free Muffin Mix to liquid ingredients in
a bowl.
2. Mix for 1 minute on low speed using a beater.
Scrape bowl down.
3. Mix a further 4 minutes on medium speed. Add
fruit, nuts, choc chips etc if desired.
4. In your muffin tin bake at 200C until fully baked
(approx. 25-30 mins).
Plain Gluten Free Sponge Cake:
500g Gluten Free Sponge Mix
225ml Water
2 Small Eggs (~100g total)
or Chocolate GF Sponge Cake:
500g Gluten Free Sponge Mix
225ml Water
2 Small Eggs (~100g total)
40g Cocoa Powder
METHOD:
1. Add Gluten Free Sponge Mix to liquid
ingredients in a bowl.
2. Mix for 1 minute on low speed using a whisk.
Scrape bowl down.
3. Mix a further 5 minutes on high speed.
4. In your cake tin bake at 190C until fully
baked.
SWISS ROLL:
Deposit thin layer of batter onto cake tray lined
with baking paper. Bake at 210C for 10-12
minutes

500g Muffin mix
105ml water
3 eggs
150ml vegetable oil
Mix together, bung in a pan and bake 180C for
approx. 15 mins
Suggestions for different flavor combinations:
• Black Forrest - cocoa/cacao powder &
glace cherries
• Diced Apricot & White Choc Chip
• Choc Chip
• Coconut Rough – shredded coconut and
cocoa/cacao powder
• Sultana Muffins – serve with lathering’s
of butter
• Tropical – diced pineapple, desiccated
coconut & top with a banana chip to
serve
• Apple and cinnamon
• Superfood High Fibre Muffins – chia
seed & goji berries
