Two Layer Cake, with Strawberry Preserves Filling

Preheat the oven to 350°F. Butter two 9-inch round cake pans. Line the pans with parchment
paper and butter the paper. Then, dust the pans with flour.
Combine the flour, sugar, baking powder, and salt in a bowl. Add butter and mix until it forms
moist crumbs. Add the milk, egg whites, vanilla and almond extract. Mix until smooth. Pour the
batter into the prepared pans, dividing evenly. Bake until a toothpick comes clean when inserted
in the center of the cakes, about 25 minutes. Cool the cakes for 10 minutes, remove them from
pans, and allow to cool completely.
With the help of an adult, use a long serrated knife to cut each cake evenly into two layers. In a
bowl, beat the cream until firm peaks form. If you have an electric mixer, use it! It will make this
a lot easier.

Place one cake layer onto a platter and spread 1/3 cup of strawberry preserves on it. Arrange
strawberry slices evenly over the preserves. Then, spread the whipped cream you just made on
top. Place the next layer on top and repeat this process. Spread the remaining whipped cream
over the top and sides of the cake.
Garnish the cake with whole strawberries. Refrigerate the cake for two hours, or until the
whipped cream is set.
Always wash your hands before you start preparing food. Ask a grown-up for help when using knives, can openers, choppers, blenders,
mixers, ovens or burners. Use pot holders when touching hot pans or trays. Ask a grown-up to help you check to see if your food is
completely cooked.
