properties giving them access to vast wetlands, canals and

of our alligator is high quality and comes primarily from the
tail and sirloin.

FARMING THE ANIMAL: Our bison meat comes from Durham
Ranch in Wyoming and is a 65,000-acre bison ranch that is
known for practicing sustainable and natural production of
bison for three generations. Due to their independent nature,
bison are handled as little as possible, so they spend their
time roaming freely. Durham Ranch does not use artificial
growth stimulants, animal by-products, and sub-therapeutic
antibiotics in any bison feed. Our bison are grass-raised and
grain-finished and are harvested for meat between 20 and 40
months of age to ensure consistent, high-quality product
from each harvest.
BEAVER
TASTING NOTES: Beaver meat is dark red, fine grained, moist
and tender, and when properly prepared, is similar in flavor to
roast pork.

our beaver is wild-caught and are very limited in stock. Only

FARMING THE ANIMAL: Our rabbit is local, coming from Creston
Valley Meats, based out of Southern California. The rabbits
never actually set foot in a farm. They are raised by children
and then sold at 4H shows. Creston Valley Meats bids on the
rabbit directly at the shows.
FARMING THE ANIMAL: We get our deer from Broken Arrow
Ranch located in the heart of Texas Hill Country where the
animals are free range, free of growth hormones and steroids,
grass-fed, and under the age of three years old. The founders
adhere to high standards in order to meet the criteria to call
their deer Cervena venison. Their process is one of a kind- the
only fully inspected, year-round harvesting of truly free-range,
wild game meat. In order to control the quality of the meat,
the venison is harvested using procedures that reduce stress.

FARMING THE ANIMAL: Durham Ranch wild boar is the ancient
ancestor of the domesticated pig and found roaming wild
throughout most of the United States. For centuries
Europeans have known the benefits of the wild delicacy; not
only for conservation and preservation efforts but for the value
that wild board provides restaurant guests. Our wild boar
consumes a free range diet, including acorns and brush so
the meat is naturally lean and extremely high in protein.
These animals are never given antibiotics or growth stimulants
and the Durham Ranch facility was awarded the Humane
Treatment of Animals certificate.
KANGAROO
TASTING NOTES: Kangaroo meat contains very little saturated fat
and is high in protein, zinc and iron, and is best served rare to
medium rare due to its leanness. It is often compared to a
fine ostrich fillet.
FARMING THE ANIMAL: A true wild product from Australia that
grazes on grass and vegetation, our kangaroo meat comes
from Fossil Farms and is considered one of the finest game
meats.
WAGYU
TASTING NOTES: Durham Wagyu is well marbled and creates a
juiciness and tenderness that cannot be found in other
breeds of cattle. Unexpectedly, the fat makeup of Wagyu is
primarily unsaturated, often times making Wagyu cuts
healthier than many USDA Prime beef products.
FARMING THE ANIMAL: Wa = Japan Style - Gyu = Beef. Wagyu
Beef is a breed like no other. We source our Wagyu Beef from
Durham Ranch in Wyoming where the family is dedicated to
the science of this superb breed. Durham Ranch Wagyu are
never administered antibiotic growth promotants and are
humanely treated.
CAMEL
TASTING NOTES: Camel is widely recognized as a delicacy across
the world due to its nutritional attributes. It has an absence of
chemicals and artificial growth hormones, is high in protein,
high in vitamins and minerals, low in cholesterol and is
extremely lean meat. Camel is adaptable meat within many
dishes and is still being explored for how it can further
accommodate the palate.
