For many pubs, hotels and restaurants, the build up
of FOG is an everyday occurrence, due to food
preparation and dish washing. It can lead to a
mixture of problems, many of which can result in
hygiene worries, unhappy customers and lost
revenues.
FOG does not dissolve in water, but floats on the
surface and coat drains, pump wells and grease
separators. If left untreated it will accumulate, solidify
and eventually cause blockages. The environment
within a blocked drain can become anaerobic and
with time, untreated FOG will start to decompose.
The process produces not only bad odours but also
acids that can attack drain material causing
structural weakness and even failure of drains.
Suspension of Flow
Most catering establishments have an interceptor or fat trap built into their drainage system, designed
to separate and retain fat and allow clarified water to be discharged. Interceptors rely on natural
bacteria for the digestion of fat and grease, but bacterial populations are constantly reduced by the use
of detergents and high temperature wastewaters. With insufficient bacterial activity, fat will build up in
the interceptor and along the drain run and cause a range of problems. An interceptor will work
effectively if emptied regularly, but this is an unpleasant time-consuming operation and an unnecessary
burden on resources.
Temporary Solutions
Chemicals can temporarily emulsify fat and grease,
but this is only a short-term solution, with the problem
being transferred further down the drain run and
wastewater treatment plant. Increasingly stringent
environmental laws will soon make this an expensive
option.
Drainage specialists can remove blockages, but
frequent call-outs are expensive and it is not a
permanent cure.
More frequent emptying of the fat trap can help, but
this is expensive, unpleasant and time-consuming.

The Right Blend
KEE Bio-Guard releases a mixture of microorganisims that produce a continuous supply of the
enzyme lipase, along with an emulsifier, which makes
hydrophobic fat readily accessible to the digesting
enzymes. When introduced into a drain, these
bacteria release lipase, which breaks down fat and
grease into its harmless constituent parts, carbon
dioxide – which is soluble in water – and water itself.
Fat that has been digested into its component parts
will not reconstitute at a later stage.
By regularly introducing sufficient numbers of microorganisims to colonise the surface of the pipes and fat
traps, KEE Bio-Guard provides a permanent solution
to an unwanted build up of grease, allowing drains to
remain clear.
However, this micro-organism population needs daily
replenishment in order to maintain its effectiveness.
Most cleaning agents and detergents, together with
very hot water, will deplete the resident population of

survival.
