Pre-order a turkey in the Meat Department.
Diestel organic or Mary’s free-range turkeys
can be ordered. All weights may not be
available, but we will make every effort to
fulfill your request. Pre-order deadline is
Monday, Nov. 23.
What size turkey should I buy?
The general rule is about one pound of turkey
per person, which gives you about 10 ounces
of cooked turkey per person.
What other meat do you have for the
holidays?
We also sell but encourage pre-orders on the
following: duck, beef rib roast, lamb, game
hens, spiral hams, and salmon.
Will you have turkeys for other upcoming
holidays?
We will have frozen turkeys available after
Thanksgiving, but we will not stock any more
fresh turkeys.
Mary’s free-range turkeys are available in
the store on a first-come, first-served basis.

FRESH OR FROZEN?
Fresh means the turkey has never been at a
temperature below 26° F since turkey meat
begins to freeze at that temperature. Fresh
turkeys are stored below 38-40° for optimum
food safety.
Frozen means the turkey has been cooled
to 0°. Most frozen turkeys have been “flash
frozen,” which means the turkey was quickly
taken to a frozen state to ensure optimum
freshness when thawed.
It’s called fresh, but it seems a little frozen?
Fresh turkeys that have been deep-chilled
to 26° can seem a little hard on the surface
as though they had been frozen when they
have not. They are really fresh. The surface
stiffness is actually a good thing because it is
a testament to the freshness of the bird. When
stored in a typical retail case, the stiffness will
start to disappear since the case temperature
is about 35°.
How long do turkeys last ?
A fresh turkey keeps for about a week from
the day it was harvested. After purchasing
your turkey, it is advisable to cook your turkey
within a few days. Always consult the “use by”
date on the packaging.
A frozen turkey is good for about a year.
COOKING
What temperature should I cook my turkey?
Most recipes cook a thawed or fresh turkey at
325o.
What about stuff inside the turkey?
Remove the giblets before cooking! They are
tucked inside the turkey cavity. Stuffing should
be loosely placed into the turkey cavity just
before roasting. A guideline is to use ½-¾ cup
of stuffing per pound of turkey.
How do I know when my turkey is cooked?
The safest way to ensure your turkey is
properly cooked is to use a meat thermometer.
To check the internal temperature of the
turkey, measure the thigh to read a 180°
temperature. Check several locations to
make sure.
Common sense precaution:
We do not recommend stuffing the turkey as
this increases the chances of increased
bacteria growth.
