Vermont Farmstead Cheese Co. & Castleton Crackers August 2013 Summer Lille Pasta ½ pint Cherry Tomatoes 2.5 oz VFCC Lille` Coulommiers, cut up 4-6 fresh Basil leaves, cut into strips Rigatoni or Penne Pasta Olive Oil Salt & Pepper Rosemary Castleton Crackers TRY THIS QUICK WEEKDAY DINNER USING SUMMER'S FINEST and VFCC LILLE! Serve with ROSEMARY Castleton Crackers!! 1. Cut cherry tomatoes in half and place in a medium size bowl. 2. Add cut up Lille cheese and basil to the tomatoes. 3. Meanwhile, bring large pot of water to boil. Add 1 tablespoon of salt. 4. Add ½ box pasta and cook until just tender. Save ½ cup pasta water. 5. While still warm, drain pasta and add to cheese and tomato mixture. Stir together gently to melt cheese. Thin with a bit of the pasta water. 6. Season to taste with salt and pepper.
