Blueberry Muffins Batter: 375 ml all-purpose flour 190 ml white sugar 2 ml salt 10 ml baking powder 80 ml vegetable oil 1 egg 80 ml milk 250 ml blueberries Topping: 60 ml white sugar 40 ml all-purpose flour 30 ml butter/margarine 8 ml ground cinnamon 1.Preheat oven to 400 degrees F. Grease muffin cups with Pam. 2.Combine flour, sugar, salt and baking powder in large bowl. 3. Place vegetable oil into a glass measuring cup; add the egg and milk, mixing well. 4. Make a well with the flour mixture. Add all of the wet ingredients and blueberries and fold in. DO NOT OVERMIX! 5. To Make Crumb Topping: Mix together sugar, flour, butter, and cinnamon in a small bowl with a fork, and sprinkle over muffins before placing in the oven. 6. Spoon batter into muffin cups right to the top, and sprinkle with crumb topping mixture. 7. Bake for 20 to 25 minutes in the preheated oven, or until done. How will I know if the muffins are ready?
