Remember - no restaurant can compare to a night-in with good friends, homemade food, a pretty setting, and a relaxed host (that’s you!) Memorable nights begin and end with the warm and hospitable spirit of the host (that’s you again!) • Warmly greet each guest and introduce him or her to other guests by saying something about the person (eg. “Meet John, he’s a terrific golfer”…. Or “This is Suzanne, she’s just back from Australia”). This gives people a starting point. • Have some spiced nuts or savoury snacks on small tables around the reception room to relax your guests (our brains automatically relax when eating with our fingers). • Offer a cocktail - most people don’t make cocktails at home, so having one at a dinner party or barbecue is a real novelty. Make it in a large batch so you can concentrate on welcoming your guests. • Set the table creatively and imaginatively – that way, your guests will be predisposed to liking your food before they’ve even sat down! Keep floral arrangements low, to avoid blocking eye contact between guests, and decorate your room with lots of candles (it’s kind to wrinkles and hides a multitude!) Avoid having scented candles in the dining area, as it can affect the taste of the food. • Always have a starter that’s ready to go on the table – this means that when your guests arrive, you have time to spend with them enjoying an aperitif. • Serve dishes that you’ve made before, less room for error! Weigh out your ingredients the night before and check all your spices are fresh – that way you’ll be calm & in control of the cooking. • Serving food “family style” with sharing platters to pass around helps to get people talking to one another and is informal, yet stylish, particularly as a starter. • Keep your numbers to between 6 and 8 guests, and make sure your table is big enough, no-one likes their personal space invaded. Set the table the night before – one less job to sweat over before your guests arrive. • People sub-consciously eat to the speed of the background music, so if you want them to savour your food, keep it slow and low…so it’s easy to talk over. Make a nice playlist in advance. • Make dinner colourful – avoid visually boring dishes (such as creamy pastas or cauliflower and potato) - as people eat with their eyes! • Don’t give your guests “death by dairy” – cream based soup, heavy sauces, followed by cheesecake dessert, or you’ll have very sleepy guests! • Have enough white wine chilled for the entire meal. Open your red wine at least 1-2 hours beforehand to let it breathe. Ideally decant it into a wide bottomed decanter. • Choose your main course first, and build the starter and dessert around that. If you are not a confident cook, buy one course – it’s perfectly acceptable, and choose a slow cooking dish like a Moroccan Lamb Tagine or a hearty Guinness Beef Stew for mains – it’ll take the pressure off you, and it can ‘hold’ for quite a while if you’re flustered! • A cheeseboard (serve at room temperature) is a good option for dessert as it requires little preparation and can finish off a meal superbly. Four to five cheeses is ample and add grapes, apple slices, nuts, figs, crackers, relish and serve with a glass of good port per guest. A signature cocktail to get your night started… Cosmopolitan (makes 4 servings) • • • • • 8 ounces Vodka 2 ounces Triple Sec or Cointreau/Grand Marnier 3 ounces Cranberry Juice 1 to 2 ounces fresh Lime Juice 4 2” orange peels/twists Add vodka, triple sec, cranberry juice and the lime juice to a pitcher then stir with ice. Refrigerate. Then, once ready to serve, pour into four martini glasses and garnish with orange peel/twist.
