Slow Cooker Kung Pao Chicken with Rice Southwest Pasta Bake

Here is this week’s menu: Slow Cooker Kung Pao Chicken with Rice Southwest Pasta Bake with Rolls / No Bake Peanut Butter Kiss Cookies Grilled Lemon Chicken with Garlic Parmesan Green Beans Southwest Seven Layer Sliders with Baked Sweet Potato Fries Chicken Bacon Alfredo French Bread Pizza with Green Salad LEFTOVERS Loaded Baked Potato Tacos with Corn on the Cob / Loaded Blonde Brownies Slow Cooker Kung Pao Chicken Serves: 4 Prep time: 10 mins Cook time: 6 hours Ingredients: Directions: 1 pound boneless, skinless chicken breasts 1 (18.75 oz) bottle kung pao sauce 1 red bell pepper, diced 1 green bell pepper, diced 1 bunch green onions, diced 1 (8 oz) can water chestnuts (optional) ¼ cup peanuts (optional) 2 cups rice (opt. side) Spray slow cooker with nonstick cooking spray and place chicken inside. Pour bottle of kung pao sauce on top and cook on low for 5­6 hours or high 3­4 hours. For the last 30 minutes of cooking, turn the slow cooker to high and add diced bell peppers, green onions, water chestnuts (optional), and peanuts (optional). After finished cooking, remove chicken breasts and cut into bite­sized pieces. Return chicken to slow cooker and stir until chicken is completely covered in sauce. Optional side: rice Southwest Pasta Bake Serves: 3­4 Prep time: 10 mins Cook time: 22 mins Ingredients: Directions: ½ pound ground turkey 1½ teaspoons minced garlic ¼ onion 1 (8 ounce) box of penne pasta ½ (16 ounce) jar of salsa ½ (8 ounce) can of tomato paste ½ (12 ounce) can of tomato sauce 1 cup of fresh spinach ½ cup of corn ½ cup of black beans, drained ¼ package of taco seasoning ½ cup of shredded mozzarella cheese 4 dinner rolls (opt. side) Preheat the oven to 350 degrees F. Heat a large skillet over medium heat. Add ground turkey, garlic, and onion and cook until meat is browned and onions are soft. Cook pasta per package instructions. When meat is done, add salsa, tomato paste and tomato sauce to the meat mixture. Cook for 2 minutes then add spinach, corn, black beans and taco seasoning and cook for another 2 minutes. In an 8x8 inch pan, add noodles and meat sauce and mix well. Bake for 15 minutes, sprinkle shredded mozzarella over top of the dish and continue baking for 3 more minutes. Optional side: rolls Grilled Lemon Chicken Serves: 4 Prep time: 8 mins + 4 hours Cook time: 12 mins Ingredients: Directions: ½ cup lemon juice ¼ cup soy sauce ¼ cup olive oil 2 teaspoons minced garlic ½ teaspoon ground ginger ½ teaspoon onion powder ¼ teaspoon red pepper flakes 4 boneless, skinless chicken breasts In a gallon­sized resealable bag, mix together lemon juice, soy sauce, olive oil, garlic, ginger, onion powder, and red pepper flakes. Add in the chicken and seal the bag closed. Place bag in the fridge and let chicken marinate for 4­8 hours, or even overnight. Remove chicken from bag and discard marinade. Place chicken on grill over medium­high heat, cooking about 5­6 minutes on each side or until the internal temperature is 165 degrees F. Southwest Seven Layer Sliders Serves: 5 sliders Prep time: 15 mins Cook time: 10 mins Ingredients: Directions: 1 pound lean ground beef 5 slices cheddar cheese ½ (8 ounce) can refried beans 1 cup shredded lettuce 1 roma tomato, sliced ½ cup guacamole ½ cup sour cream 5 small buns Divide beef into 5 small patties. Grill until done. Melt cheese on top of patties. Cut buns in half. Place a small amount of refried beans on the bottom of each bun. Top with some shredded lettuce. ​Place beef patty with melted cheese on top of lettuce. Add your tomato and guacamole.Top with some sour cream and place other bun on top! Chicken Bacon Alfredo French Bread Pizza Serves: 4 Prep time: 10 mins Cook time: 10 mins Ingredients: Directions: ½ loaf French bread ½ (16 ounce) jar alfredo sauce ½ teaspoon garlic salt ½ teaspoon Italian seasoning 2 cups shredded mozzarella cheese 1 cup shredded chicken 1 roma tomato, diced 2­3 green onions, thinly sliced ½ (3 ounce) package bacon bits ¼ cup shredded Parmesan cheese 1 (11.3 ounce) bag green salad (opt. side) Ranch dressing (opt. side​) Preheat oven to 400 degrees F. Cut loaf of French bread lengthwise and place on a large baking sheet. Spread alfredo sauce evenly over bread, as much or as little as you like. Sprinkle garlic salt and Italian seasoning on top of sauce. Top with mozzarella cheese, cooked chicken, tomatoes, green onions, bacon bits, and Parmesan cheese. Cook for about 10 minutes, or until cheese starts to melt. Cut into slices and serve. Optional side: green salad Loaded Baked Potato Tacos Serves: 4 Prep time: 10 mins Cook time: 1 hour 15 mins Ingredients: Directions: 4 large potatoes 1 pound ground beef 1 (1.5 ounce) package taco seasoning mix ¾ cup sour cream 1 cup shredded Mexican cheese 2 green onions, sliced 1 tomato, diced ½ (6 ounce) can black olives, sliced 4 strips bacon, cooked and crumbled 4 ears of corn (opt. side) Wash and pierce potatoes with a fork. Wrap in aluminum foil and bake at 350 degrees F for 1 hour. During the last 20 minutes while the potatoes are baking, brown the ground beef. Drain grease and add the taco seasoning mix and the water that is called for on the taco seasoning packet. Let it simmer as directed on the taco seasoning packet. After the potatoes are done baking, cut them in half lengthwise. Mash them slightly with a fork while in their skins. Spoon about ⅓ cup seasoned hamburger over each potato. Then top with a dollop of sour cream, cheese, green onions, tomatoes, olives, and bacon. Optional side: corn on the cob Garlic Parmesan Green Beans Serves: 4 Prep time: 5 mins Cook time: 10 mins Ingredients: Directions: 1­2 pounds green beans 3 Tablespoons olive oil 4 Tablespoons minced garlic ½ teaspoon red pepper flakes salt and pepper, to taste 2 Tablespoons shredded Parmesan cheese Trim the ends off the green beans. In a large pot, boil green beans for 5 minutes, drain through a strainer. In the same pan over medium heat, add olive oil, garlic and pepper flakes, saute for 1 minute or until garlic turns golden brown. Stir in the green beans and cook for 5 more minutes. Season with salt and pepper. Top with shredded parmesan cheese. Baked Sweet Potato Fries Serves: 3­4 Prep time: 10 mins Cook time: 40 mins Ingredients: Directions: 2­3 medium sized sweet potatoes 1½ Tablespoons olive oil ¼ teaspoon salt ¼ teaspoon pepper ¼ teaspoon garlic salt ½ Tablespoon cornstarch Preheat oven to 450 degrees F. Wash and peel sweet potatoes. Cut sweet potatoes into fry shaped slices. Put sweet potatoes in a large Ziploc bag and add the rest of the ingredients to the bag. Close the bag and shake until all of the sweet potatoes are evenly coated. Pour contents of the bag onto a cookie sheet lined with foil and spread fries out evenly. Bake for 40 minutes, flipping halfway through, or until browned on the outside. No Bake Peanut Butter Kiss Cookies Serves: 13 cookies Prep time: 10 mins Cook time: 5 mins Ingredients: Directions: ¼ cup corn syrup ⅛ cup brown sugar ½ cup peanut butter, creamy ½ teaspoon vanilla 1½ cups rice krispie cereal 13 chocolate kisses, unwrapped In a medium saucepan mix together corn syrup and brown sugar over medium heat, stirring constantly until it comes to a full boil. Then remove from heat and stir in peanut butter and vanilla. Have the cereal in a big mixing bowl and add the peanut butter mixture to the cereal. Stir until well coated. Drop by 1½ inch balls onto a cookie sheet lined with waxed paper or parchment paper. Push a chocolate kiss into the center of each cookie ball and form the cookie around the base of the kiss. Let cool for a few minutes so they can set up. Loaded Blonde Brownies Serves: 12 brownies Prep time: 5 mins Cook time: 25 mins Ingredients: Directions: ¼ cup butter, softened 1 cup brown sugar 6 Tablespoons sugar 1 egg 1 teaspoon vanilla ¾ cup flour ½ teaspoon baking powder ¼ teaspoon salt ½ cup milk chocolate chips ½ cup white chocolate chips 6 Tablespoons macadamia nuts, chopped Heat oven to 350 degrees F. In a large mixing bowl cream butter, brown sugar and sugar until light and fluffy. Add in egg and vanilla and beat well. Gradually add in flour, baking powder, and salt and mix well. Fold in chocolate chips, white chips, and macadamia nuts. Pour into a greased 8x8 inch pan and spread out evenly. Bake for 20­ 25 minutes. Should be golden brown. Cool and cut into bars.
