The YARD The Yardstick Academy of Resource & Development The mission of The YARD is to raise and provide standards for the Philippine coffee industry and the local coffee culture. The YARD focuses on specialty coffee and offers courses and workshops for industry professionals and home coffee enthusiasts. Home Workshops The YARD’s Home Workshops are introductory sessions for anyone who wants to develop their coffee knowledge and basic brewing skills. Given the focus on specialty coffee, the workshops are structured to be interactive and informative. Class sizes are kept to a maximum of 8 participants to make sure everyone receives sufficient attention and given the proper instructions. These courses are suitable for coffee enthusiasts, home baristas and the general public. I. Drink Different, An Intro to Specialty Coffee What is Specialty Coffee? What makes it so “special”? “Drink Different” is a discussion focused workshop where the attendees get to learn and understand what happens behind the scenes before the coffee is served in a cup. Most of the time will be spent on understanding concepts behind Specialty Coffee. Attendees will be able to try one brewed coffee as part of the workshop. Each participant takes home a Php 100 Yardstick voucher after the workshop. Prerequisites: N/A Duration: 60 minutes Cost: 500 per student, Minimum 5 students II. Tasting Specialty Coffee Tasting coffee is easy. Being able to describe or articulate what you taste or smell is the challenging part. “Tasting Specialty Coffee” provides you with the foundation to help you appreciate the nuances of specialty coffee. The session focuses on a sensory approach to tasting and describing coffee. There will be at least 3 coffees for everyone to taste. Each participant takes home a Php 100 Yardstick voucher after the workshop. Prerequisites: N/A Duration: 75 minutes Cost: 800 per student, Minimum 5 students III. Brewing Coffee at Home Looking at all the apparatus used in cafes can be overwhelming. The YARD firmly believes that brewing coffee at home should be a simple and enjoyable ritual. “Brewing Coffee at Home” helps you determine the following: selecting the right coffee, choosing an appropriate brew method and determining a recipe that works for you. During the session, 3 different brewing methods will be explored. Each participant takes home a Php 100 Yardstick voucher after the workshop. Prerequisites: N/A Duration: 90 minutes Cost: 980 per student, Minimum 5 students Professional Courses The YARD’s Professional Courses take coffee learning to a different level. There are so many facets to coffee and these courses focus deeply on what happens in a specialty coffee bar or café. Each course is designed to have a balance of theory and practical sessions. Class sizes are kept to a maximum of 6 participants to make sure everyone receives sufficient attention and given the proper instructions. These courses are suitable for baristas, café owners and managers, home baristas and coffee enthusiasts. I. Espresso Fundamentals Coffee making is a craft in itself. Espresso is the base for most coffee beverages and It is critical to get your foundation right. “Espresso Fundamentals” highlights the history of espresso and dives right into the craft of pulling a “God Shot”. The standards that will be shared during the course will ensure quality espresso extraction. Other topics covered are grinding and dosage, distribution and tamping, milk steaming, machine maintenance and basic espresso beverages. Prerequisites: N/A Duration: 3 hours of theory and hands-on Cost: 3500 per student, Minimum 4 students II. Recipe Design The “Recipe Design” course takes off where “Espresso Fundamentals” left. This course teaches espresso flavor manipulation using dosage and grind size, temperature and extraction time. Participants also get to explore the effects of water type and age of coffee in extraction. Multiple guided tastings will be conducted during the course, therefore participants should be prepared to consume a lot of coffee. Prerequisites: Espresso Fundamentals Duration: 2 hours of theory and hands-on Cost: 3800 per student, Minimum 4 students III. Workflow Management Learning how to make coffee is one thing. Applying what you have learned in a busy café setting and making sure you are still producing good coffee every cup is what separates a seasoned barista from the rest. “Workflow Management” is a hands-on session to simulate real world working conditions. The course will look into preparing beverages while maintaining quality, cleanliness and productivity. Prerequisites: Espresso Fundamentals Duration: 3 hours of hands-on Cost: 5000 per student, Minimum 4 students IV. Milk Chemistry Milk plays a significant role in most coffee beverages. Next to coffee, it is probably the most used ingredient in a café setting. “Milk Chemistry” is an in-depth exploration on what exactly goes on in the milk pitcher as you stretch and texture the milk. The course will also look into proper milk use and storage, minimizing wastage, proper stretching and texturing skills and using alternative milk options. Seasonal Workshops The YARD will hold seasonal workshops and forums to facilitate deeper appreciation of coffee and to facilitate further discussions with regards to relevant topics. These will be announced via our social media channels and in-store collaterals. Duration & Cost: TBD II. Workshop Rental The YARD workshop becomes yours for either half a day or a full day session. To be able to focus on coffee making, the YARD takes you away from the busy café setting and lets you practice within your own space, at your own pace. Some will use the space for competition practice or to fine-tune their espresso and latte art skills. Duration: 4 hours or 8 hours Cost: Price on Application III. Corporate or Group Events The YARD conducts coffee appreciation sessions for corporate clients or large groups – whether it is for team building, an all-hands employee meeting or a school fieldtrip.
