The name Bing comes from a Chinese man named Ah Bing who worked as a foreman on the farm where the first Bing-style cherry was harvested in the late 1800s. Today, the Bing is the most-produced sweet cherry in the United States, and for good reason: these cherries grow large, with a deep, dark red color. Just rinse, drain and pop the cherries into a plastic freezer-safe bag. They’ll last in the freezer for up to 10 months. Our produce department’s No. 1 volume item has been researched the world over, and it offers dozens of documented benefits. Here are just a few ailments for which the mighty banana can be used: Crispy, crunchy and just plain addicting — we can’t stop eating these scrumptious snacks. • Energy: Two bananas can provide enough energy for a strenuous 90-minute workout. • Depression: The tryptophan contained in a banana converts to serotonin in the body, which relaxes you and improves mood. • Strokes: Eating bananas as part of a regular diet can cut the risk of stroke by as much as 40 percent. • Hangovers: Make a banana milkshake with honey. The tea really mellows out the tartness of the lemonade, while giving you a lower-calorie drink. Stephanie Stille, Specialty Grocery Do you ever wonder what the benefits of non-dairy beverages might be? With choices that include soy milk, rice milk and almond milk, most of us have our favorite and we tend to stick to it. But why consume one of these milk alternatives in the first place? Soy Milk Soy milk has comparable protein levels to cow’s milk and it’s also low in saturated fats. Its natural form has little digestive calcium, so enriched soy milks are always a good option, because they have added calcium. If you have never tried a milk alternative, soy milk is a good one to try first. Flavored versions eliminate the chalkiness of some plain soy milks! We like Soy Dream in original, vanilla and chocolate flavors. Almond Milk Almond milk, derived from ground almonds, has a light, nutty taste. Imagine drinking cow’s milk out of the bottom of your cereal bowl – we think it tastes like that. One of our favorite lines is locally grown and produced by Blue Diamond in flavors including original, vanilla and chocolate. Also try enriched versions, which provide an extra boost of vitamins. Almond milk is naturally high in vitamin E, with no cholesterol or lactose. And it can often be used as a substitute for cow’s milk in recipes — in its unsweetened version, of course. Rice Milk Rice milk is the liquid squeezed from rice. Usually, this milk is produced from brown rice, but sometimes other varieties of rice are used. What we like about rice milk is that its taste isn’t overly strong, yet it has a slightly sweet undertone. One of our favorites for flavor is the original enriched Rice Dream. MILK VS. WATER: COCONUT ANATOMY Stephanie Stille and Jeff Weigel, Grocery We love coconut in all its forms, but right now we’re especially enamored of the two popular drinks that come from this amazing fruit: Coconut milk and coconut water. Coconut milk is the liquid that comes from the flesh of coconuts. The best milk with the sweetest flavor comes from squeezing coconuts that are fresh and ripe. This milk is typically used for cooking — we love using Thai Kitchen Coconut Milk to make delicious curries! Coconut milk itself is full of potassium and calcium, so it’s a great alternative to cow’s milk if you cannot consume lactose. Be careful though, because coconut milk is high in calories. Coconut water is the clear liquid that can be drained from the fruit when it is cracked open. Put simply, it’s nature’s sports drink. Just like many pre-workout and replenishment products used by athletes, coconut water has re-hydration properties and carbohydrate and electrolyte levels that will feed an athlete’s body. Try Zico Natural Coconut Water for a pre-workout boost: it has more potassium than a banana and includes five essential electrolytes, with no added sugar. Jack Daniel’s Achiote Flank Steak Planning to throw a rib eye on the grill this summer? Check out our barbecueing tips to achieve the perfect medium-rare steak. 1 Use either a steak dry rub, marinade, or salt, pepper & garlic to add some flavor to your meat. 2 Grill steak with the barbecue lid closed over high heat for 2 minutes (this sears the steak). 3 Flip the steak and reduce heat to low-medium. Cook for a total of 10 to 14 minutes; about 7 minutes per side. 4 Take the steak off the grill and let stand for 2 minutes before slicing across the grain and serving. From our Recipe Archive: JACK DANIEL’S ACHIOTE FLANK STEAK The mouthwatering marinade on this flank steak makes us want to throw it on the grill all summer long — try it with fresh summer veggies or one of our deli salads. Fresh to Market flank steak 3 tbsp. garlic powder 1 tbsp. black pepper ½ tsp. chili powder 2 tbsp. granulated onion 1 tbsp. lemon pepper 2 tbsp. brown sugar 2 tbsp. dry thyme 4 tbsp. achiote (you can find this in our international foods aisle) ½ cup Jack Daniel’s Whiskey 3 tbsp. vegetable oil Kosher salt to taste FRESH TO MARKET MARINATED BEEF ENTRÉES Angel Nolasco, Meat & Seafood Looking for a great seasoned or marinated steak or roast to test your grilling skills? Rub the meat generously with the marinade. Seal in an airtight container and let sit in the refrigerator at least two hours (best if overnight). Rub the meat with vegetable oil and season with salt. Grill over medium-high to high heat. About seven minutes per side will produce a mediumrare steak (make sure the internal temperature reaches 125º F). The outside of the steak will get dark because of the rub. Slice meat across the grain and serve. Pop Shoppe We all love our soda, but when was the last time you had some “pop”? Pop from the Pop Shoppe, that is. Long before the cola wars of the 1980s, Pop Shoppe premium soda made its mark. Guests could enter a Pop Shoppe (known for its distinctive red crates) and bottle their own sodas, filling up their reusable bottles with any flavor they wanted. Pop Shoppe was the true “green” soda company, long before the concept of going green had been created! Although Pop Shoppe stores are no longer around, this nostalgic brand is making a comeback. Not only is it locally made and family-produced by our friends at Blue Dog Beverage, it is delicious! A favorite treat of ours is this root beer paired with vanilla ice cream for a delicious root beer float. Boylan Bottling Co. Boylan — a family-run bottling company — brings a little bit of yesteryear into today’s homes. In business since 1891, Boylan still produces the soda flavors that your grandparents remember from when they were young. These sodas are made with pure sugar cane and continued, next page CRAVEABLE JARLSBERG Kaelynn Medbery, Specialty Cheese Swiss has never been one of my favorite types of cheese, but for some reason I can't do without my Jarlsberg. For those of you who've never tried this amazing cheese, I highly recommend it! It is sweet and nutty with large irregular holes (or eyes), and it melts extremely well. A natural for chef salads, sandwiches or even burgers (Jarlsburger, anyone?), my most favorite way to eat it is as a dip. I’ve included the recipe below — it may be rich, but dang, it’s good! Ingredients: ½ stick of butter 3 cups sliced onions 3 cups shredded Jarlsberg Cheese ½ cup mayonnaise Pepper Paprika Cool facts about this awesome cheese: • • • It gets its name from the city in which it was first produced: Jarlsberg, Norway (south of Oslo) The original recipe dates back to the 1850s Jarlsberg is so popular that we buy it in pallets — more than 1,800 lbs. at a time! Specialty Sodas, Preparation: Sauté the onions in butter until translucent. Add mayonnaise and shredded cheese and stir until just melted. Season with fresh cracked pepper. Pour into baking dish and sprinkle top with paprika. Bake at 350º for 15-20 minutes, or until top begins to brown. Unlike many modern-day root beers, which are loaded with vanilla and have a super-creamy taste, Boylan root beer is rich and spicy with a light creaminess. FRESH MOZZARELLA Kaelynn Medbery, Specialty Cheese You can always tell when summer is here, because the local tomato season is in full swing. And whenever tomatoes are ripe, I’ve got to have Fresh Mozzarella. Did you know that the Fresh Mozzarella in our Specialty Cheese Departments is second to none? No, really! Time after time, vendors bring us new products to try, but as of yet, we’ve not found anything that can even hold a candle to the flavor, texture and quality of the product that we’ve been carrying for more than 10 years now. Not only does it taste good, but it’s 100 percent natural (no preservatives, no added hormones or flavorings, ever!). Mozzarella Sandwich: Need an idea for a quick meal? Grab a container of “Ovoline” (that’s the size of Fresh Mozzarella we recommend) from the Specialty Cheese Department, a baguette from the Bakery, and some fresh tomatoes and basil from Produce and make yourself one of the best sandwiches you’ll ever have (it’s also good grilled). For an extra special treat, add some thin-sliced Prosciutto from the Deli. Buon appetito! CELEBRATE SUMMER: THE SEASON FOR FRESH CORN IS HERE The Firecracker Jeff Clark, Executive Chef The warm weather has returned, and finally, corn is back in season and tastes delicious. When it’s hot and you don’t want to turn on the oven, come to Nugget’s Deli for three salads using sweet summer corn: Grilled Corn Succotash: Edamame beans replace the lima beans in this classic recipe. A touch of rice vinegar rounds out the sweetness of the corn, and red onion provides a bit of bite. This dish can also be served as a side dish or used as a topper to a crisp Romaine salad. Quinoa with Corn and Cherry Tomatoes: If you have never tried quinoa, you need to! This salad has grilled corn, cucumbers, cherry tomatoes and is dressed with basil vinaigrette. We boil the quinoa in a corn stock made from the corncobs, so even though this salad is vegan, it is packed with flavor. It tastes like summer on a plate! Sonoran Corn Salad: With grilled corn, kidney beans and roasted red pepper, this salad is dressed with chili-cumin vinaigrette; it’s sweet, spicy and scrumptious. It works great as a side dish to grilled items or all by itself as a light meal. BEYOND BUILD-YOUR-OWN: NUGGET’S PREMIUM SPECIALTY SANDWICHES Jeff Clark, Executive Chef Everybody knows that we have the best build-your-own sandwiches around, but it’s time we told you about our premium specialty sandwiches as well. We use only the finest ingredients and pile them on high. Here are three that you should try: Rosemary Flank Steak: Rosemary-marinated, grilled flank steak, bleu cheese and a garlic-herb mix served on bakery-fresh Ciabatta bread. Try it heated and grilled. The Firecracker: Pepper turkey, both cheddar and pepper jack cheese and chipotle mayo served on a bakery-fresh baguette. The Romano (NEW!): This Italian-themed sandwich has Genoa and Sopressata salami, with provolone cheese and artichoke Romano spread, served on bakery-fresh Ciabatta. We’re offering almonds, pecans and macadamia nuts from San Diego’s famed Nutty J’s Nut Shack. These nuts originally gained their loyal following at the San Diego stadiums for the Chargers and Padres sports teams, and in 2010 a Nutty J’s location came to Power Balance Pavilion (formerly Arco Arena) in Sacramento. Now we’re thrilled to offer these addicting cinnamon treats in our bulk department. I recommend all three varieties, but the macadamias are my favorites, because of their natural, rich and buttery taste and mouthwatering cinnamon glaze. Did You Know? Know your alternative wine packages: Bag-in-Box Wine GOOD WINES COME IN ALTERNATIVE PACKAGES Hank Beal, Adult Beverage Most of us probably associate fine wine with a traditional 750 ml. glass bottle. There are many different shapes, of course: the Claret bottle for Cabernet, the Burgundy bottle for Chardonnay, and so on. Also traditionally, these glass bottles were sealed with the natural bark from a Quercus Suber, commonly called the Cork Oak tree. But as many wine lovers now know, traditional corks can cause more harm than good (see the last Field Guide if you need the back story), and as it turns out, glass bottles might not be the only way to package fine wines, either. These days, you can find premium wines in all forms of packaging: Tetra Pak Wine Canned Wine and Liquor • The bag-in-box. This is no longer just for cheap generic wines. In the 3-liter format, we have varietal wines like Chardonnay from Monterey and Cabernet from Paso Robles. We even have nice French wines in this format. Wine stays fresher when packed in a bag, because the bag collapses as the wine is poured and there is less oxidation because little or no air gets in. The 3-liter bag-in-box is equal in volume to four 750 ml. bottles. • Wines in 500 ml. and 1-liter Tetra Paks. These are environmentally friendly, lightweight and easy opening packages that provide a great option when you don’t want any glass around (like when you’re on the beach or camping). Because this packaging is cheaper to produce, it offers a lower cost per ounce of wine. • Wines and liquor in cans. We now offer the Flasq 375 ml. wine in lightweight aluminum cans. Again, if you are camping or at a park and you don’t want glass, but you want convenience and durability, this is a nice option. We also have the Coppola Sophia sparkling wine in a 187 ml. can. And we just got in the Kru Vodka that is packed in a reusable aluminum can! Remember: don’t associate these new packages with lower quality; they are in many ways better for the wine and better for the environment. HOW TO: PROPERLY SERVE BEER Hank Beal, Adult Beverage Think for a moment about the hundreds of commercials you’ve seen that show people tailgating and drinking beer directly from a can or bottle. You never see people drinking wine this way, so why is serving beer in a bottle so often depicted? In fact, the same reasons why you would never skip a glass for wine also apply to your favorite brews. Beers today express the same complexity, layering and finish that you find in your favorite wines. Many breweries have designed specific glasses to match the style of their beer, but a good everyday glass to enjoy your beer is a large brandy style snifter. The large bowl and opening of the snifter allow the beer to roll in the glass and form a proper foamy head. Follow these steps to get the full enjoyment out of your beer: • Make sure the glass is clean. Soapy residue will distract from the flavors and aromas. • Pour the beer directly down the middle of the glass until ¾ full, which will allow room for a head to form. This allows the beer to develop and the CO2 in the beer to escape, keeping it out of your stomach. • Let the head drop below the rim of the glass and put your nose over the glass to catch the aromas. • Swirl the glass again, allowing the head to reform. Smell again, and then take your first sip, letting the beer flavors develop in your mouth. • Repeat and enjoy. A PERFECT BREW FOR EVERY SEASON Hank Beal, Adult Beverage The changing seasons not only influence the games we play and the clothes we wear, but also the food and drink we consume. This applies directly to the styles of beer available throughout the year. The beginnings of seasonal beers were found with breweries in Europe, as many of them brewed holiday or Christmas beers to celebrate the season. These beers were typically richer, darker and higher in alcohol to match the hearty holiday foods. And because there are three seasons each year besides winter, breweries found that they could extend the popularity of seasonal brews year-round by creating beers tailored to spring, summer and fall. Following winter, spring brings a sense of anticipation that brewers have tried to capture in their spring concoctions. Typical spring brews move away from the darker beers of winter to lighter beers that still show a full body. Sam Adams Noble Pils is a classic spring brew. In the fall, brews tend to be maltier and show a typical amber color. Many breweries label their fall brews as Octoberfest beers (New Belgium Brewing Octoberfest or Sierra Nevada Tumbler are good examples). Right now we’re enjoying summer: the food is lighter, and so are the beers. The brews are crisp, refreshing (sometimes with a hint of lemon) and easy to drink. We love Blue Moon Summer Honey Wheat. So whenever you’re looking for a cold one, there’s a beer out there to fit the season. Cheers! JACK DANIEL’S TENNESSEE HONEY Hank Beal, Adult Beverage Jack Daniel’s does not release new whiskey items very often, but right now we’re in luck, because they’ve just come out with a great new product: Jack Daniel’s Tennessee Honey Liqueur. (Don’t worry, Firefly didn’t copy Skinnygirl — they actually had applied for the use of “Skinny” before Skinnygirl did!) This is the original Firefly sweet tea, without the sugar. Sweetened with Truvia, a zero-calorie sweetener made from the Stevia plant, Firefly Skinny Tea has only 72 Calories, 0 grams of carbohydrates, and 0 grams of fat per 1.5 oz. serving, compared to their regular tea at 110 Calories per 1.5 oz. serving. It also is lower in alcohol, at 60 proof. I tasted the two side-by-side, and the actual flavor of the tea comes through much more in the Skinny version.
