Vineyard : The village of Puligny-Montrachet is located south from Beaune between the villages of Meursault and Chassagne-Montrachet. With its two neighbours, Puligny is considered as one of the three iconic villages of great white wines in Côte d’Or and particularly known for the elegance of its wines. Puligny-Montrachet is the cradle of the prestigious grands crus Montrachet, Chevalier-Montrachet, Bâtard-Montrachet and Bienvenues-Bâtard-Montrachet. Puligny has a Gallo-Roman origin and Pul was meaning swanp and puliniacus, the house of the swanp. The first vineyards were planted by the monks in the sector of Blagny end of the XII century. In 1879, Puligny added to its name this of the most prestigious wine of the village, Montrachet and became the village of Puligny-Montrachet. The climat, or named vineyard, Les Folatières is located in the west part of the village and it is considered as one of the best 1er Cru of Puligny. The name Folatières comes from “follet” which means fog and nowadays, we still have fog in this sector when the weather is humid having in mind that the climat is located in the middle of the slope. The climat is 17.63 hectares in size and is up above 1er Cru Clavaillon. The estate has two parcels: one is one hectare large located in the middle of the climate which brings richness and complexity. The other one of 0.5 hectare is located near the Chevalier-Montrachet and brings the uprightness and the refinement. Soil type : limestone and clay. The parcel in the middle has more clay and the parcel near Chevalier is very chalky. Varietal : 100% Chardonnay – Guyot pruning with different seasonal processes in the vineyard (pruning, trellising on wires/tying-in, thinning fruit-bunches). The vines are 25 years old. Surface Area : 1.5 ha (3.37 acre) with average yield of 45 hl/ha. Production of 9,000 bottles. Winemaking : the grapes are harvested by hand and sorted out twice (when picking the grapes and on the sorting table). They are lightly pressed then in a pneumatic press at a low pressure to get a slow extraction. After a gentle racking of the must (cold settling at 13 °C for 12 hours), the wine is put in French oak casks of 228 liters (25% of new oak) for both of alcoholic and malolactic fermentations with wild yeasts and wild anaerobic bacteria during 18 months. During this time, we did the stirring of the lees in the barrels 2 to 3 times only. A month before the bottling, the wine from the different barrels is put in a stainless steel tank to make the blend. The wine is finally fined and lightly filtered before bottling it according to the lunar calendar. Tasting notes : Citrus, very mineral aromas (silica). This lively wine has an incredible length and its complexity referred to the great white burgundy wines we expect with a singular personality. To serve with : Grilled fish, salmon and seafood. Temperature of service: 12-14 °C. The most representative and fine wine of Puligny-Montrachet. The two parcels bring a real balance in the cuvée.
