• 150mlProsecco
• Oliveoilfordeepfrying
• Icingsugarandorangezestfordustingontop
Method
Combineeggs,sugar,ricotta,orangezestandsaltinamediumbowl.Addtheflour
andProseccoandmixgentlytonotoverstimulatethegluten.Thisbatterisvery
forgivingandafewlumpsareanadditiontothetexture.
Pouroilintoashallowsaucepan,andheatovermedium-highheat.Drop
tablespoonsofbatterintothehotoilandfry,inbatches,for2-3minutesoruntil
golden.Drainonpapertowels.
